One of my favorites :) You can jazz it up any way you want to!

Mac and Cheese

8 ounces elbow macaroni
2 tablespoons butter
1/4 cup all-purpose flour
2 cups milk
1 cup shredded Cheddar cheese
8 ounces cubed processed cheese food

In a large pot with boiling salted water cook elbow macaroni until al dente. Drain.

In a medium saucepan, over medium heat melt butter or margarine. Whisk flour and stir vigorously. Add milk and cook until thick and bubbly, about 5 to 7 minutes. Add cheeses and stir until completely melted.

In a large bowl mix together the drained pasta and cheese sauce mixture. Toss to coat evenly.

Pour into a greased 2 quart casserole dish. Bake in a preheated 350 degree F (175 degrees C) oven for 30 minutes. Let stand 10 minutes before serving.

It's sooo easy....foodnetwork.com...Rachael Ray..

This is how my mother-in-law made it.

Boil the macaroni until tender. (I use about 2 cups of small elbows)

Grease a casserole dish with margarine. Place 1/2 of the cooked macaroni in the dish. Layer with grated sharp cheddar cheese. (I use about 3/4 cup cheese per layer). Layer the rest of the cooked macaroni and add another layer of cheese. In a bowl, mix 2 large eggs with 1 cup milk and salt and pepper to your taste. Pour the milk-egg mixture over the mac and cheese. It should cover it, if it doesn't just add a little more milk. Bake in a 375 degree oven for 45 minutes to 1 hour or until the mixture is set. (I usually start it off covered and then uncover it for the last 20 minutes or so.)

In the South, we refer to this as Macaroni Pie since it has eggs in it. Ordinary mac and cheese is just macaroni mixed with a cheese sauce.

Additional: I just grated the cheese for mine and it's an 8 oz block of cheese.

My grandma used to make regular mac n cheese. With noodles, velveeta, butter and milk. Then pour it into a baking dish and top it with shredded cheddar cheese and bake it until its gets nice n bubbly on top.

Here is the best one I have ever made. Alton Brown is Da Bomb.

Baked Macaroni and Cheese Recipe courtesy Alton Brown

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.
