Yeast bread... What would happen if.....?!


Question: With yeast bread what would happen if I let it rise in the bread pan and then once it rises put it into the oven without punching it down or letting it rise the second time?

It'll be puffy, fluffy and light! That's how I make my bread. I've been doing it wrong this whole time.... oh well it's yummy!

It somewhat depends on the dough recipe, and I only say that because I've had successful results when I haven't punched down dough, and waited for a 2nd rise. But, I've also ended up with a glob of uncooked dough, or an air pocket, in the middle of a loaf of bread. It's not worth it to be lazy.
