Brandy or Rum in the sweet potatoes?!

Brandy unless you have some coconut rum. That would be scrumptious!

I would use rum. derivative of sugar and the flavor is amazing with them

Captain Morgan's coconut rum! I flame it when I saute' the sweet the potatoes to deepen the flavor!

I do something a little unconventional.

The sweet potatoes I boil until tender, cool, peel, and then slice them into half inch slices. I take a stick of margarine melt it in a large frying pan, and add about 1/2 to 3/4 cup of brown sugar and make it bubble. I put the slices into the hot margarine/sugar mixture and fry them until they get a little carmelized on both sides. I then turn off the heat and add about 1/4 c of vanilla rum, and then with a long stick lighter, light the whole pan on fire, (so it flambes, but please be careful when you do this) jiggle the pan until the flames go out. I remove the slices and layer them into a casserole dish, pour any remaining sugar goo (as I call it) over the potatoes, and then top with marshmallows or toasted pecans. They are delicious!
