Why do my chocolate chip cookies not flatten out?!
Answers: Why is it that sometimes when I make cookies they drop - or come out flat (as a normal cookie should) and other times they don't drop as much - they come out more like fat nuggets?? what could I be doing wrong? The recipe is exactly the same, as is the oven temperature. I just don't get it?! any ideas??
flour and humidity. in winter there is less humidity in the air. when baking I reduce the flour in the recipe just slightly. I also had problems with inconsistencies. use the table knife technique to flatten out dry ingredients in a measuring cup or spoons. don't pack (unless for brown sugar)or use finger.
Usually its the butter. Start with room temp butter, and mix with the sugars until very thin.

Did you sift the flour? too much makes cookies not flatten.
Hmm.. because you don't add liquid.. i dunno.. i never baked before.. but it's science! :]
Are your eggs always the same temp, do you use butter sometimes and margarine others...I find imperial and cold eggs give me the cookies everyone craves
you know I heard that when you bake the second batch an yopu place them on a all ready hot tray that it makes them flat, are you using a cold tray ea time?
