going to a friend's house. They're doing 3 turkeys and a ham.

brining all.
one deep fried,
one oven roasted,
one redneck style (beer can up the butt)

stuffing out (Russian style, we call it natchinka)
no fruit in it

The men are cooking the turkeys,
the women are preparing the sides and tending bar,
and all are watching football.

roasting not brined
remove gibblets etc from the inside (usually in a plastic bag. )
fold the neck and pin closed .
smear skin with butter
place on rack in roasting pan
cover in cheesecloth
cover pan
roast in oven , basting every 15 minutes or so .
roast uncovered for last 10 minutes to crisp skin

I do stuffing outside the bird , using some of the pan juices or a can of turkey gravy for flavor. No fruit , usually cranberries or cranberry jelly seperate

Roasting is the simplest and can still watch football.
Stuffing in the bird does have a better flavor.

Roasting pan with lid (I use the electric roaster now days).
Put 1-2 " water in bottom. Lid on it 350 degrees for extended time for the weight of thawed turkey. Watch football until cooked (about 45 minutes before done, removed lid for remainder of cooking time to receive a more golden brown color). Toss washed potatoes during last hour or 1 1/2 hour prior to turkey done. Buy your gravy so you can just reheat.

Microwave or pan heat veggie package.

Basic bread dressing is always a hit. Homemade; makes 8 cups which can stuff a 12 lb turkey:
3 qt dry bread crumbs
1 t.. sage
1 t. thyme
1 t. rosemary
1 1/2 t. salt
1/3 cup melted margarine or butter
1 cup canned chicken/turkey broth

Optional ingredients to add (all or mix & match):
1/3 cup chopped parsley
1 cup chopped onion
1 cup chopped apple
1 cup chopped celery

Make fruit salad night before while baking your frozen pie:
drain well:
2 cans fruit cocktail
2 cans mandarin oranges (save few for top decoration)
1 can tidbit pineapple
1 can crushed pineapple
1 large bag (or 2 smaller) thawed raspberries
mix in whipped cream (save some for top decoration)

Think ahead including setting the table the prior night & that morning - - have great meal and still watch football.
