Do you have any advice about falling cheesecake?!


Question: We make a cheesecake every Thanksgiving, and most of them fall about an inch when they start to cool down. Do you have better luck? They still taste good, but it would look better to have full height.

It could be that you're slightly under-baking the cake. Even though you might be following the recommended time, it's possible that your oven is a bit slow (not entirely accurate, temperature-wise), so maybe it's just slightly undercooked. Mine don't fall -- if anything, they puff up and then settle as they cool, but they don't fall down as you've described. Here is a bit of information about this:

haha it's not anything you're doing wrong. that's what all cheescakes do. they sag for a little bit and then after it's at a normal temperature it stays still. everyone has the same luck as you!

It is perfectly normal for a cheesecake to fall - if you want more height or to hide that, cover with whipped cream or fresh fruit and no one will notice.

cheesecake isn't supposed to be fluffy. Try to beat as little air as possible into it so it won't rise in the oven and thus cant fall afterwards.
