Once the turkey is thawed, wash it under running water and make sure it is cleaned out thoroughly. Preheat the oven to 500 degrees. Butter and season the outside of your turkey and put it in the oven for about 20 minutes until it has the beautiful golden color. Turn your oven down to about 200 and cook the turkey for 40-50 minutes per pound. Leave the turkey uncovered. Make sure you don't stuff the turkey since you are cooking it at such a low temperature and use a thermometer to make sure it is done (internal temp of 180 F).

I really don't recommend doing this if you are planning on getting a good night's sleep. You should set the alarm in case you fall asleep even though this is a low temperature.

Don't do it...we tried a few years ago using some weird paper bag recipe and it was like mummified turkey. Your best bet w/ a 12 pounder is to put it in at about 425 for 30 minutes to brown (well buttered), then cover loosely with foil and turn the heat down to 325 for about 4hours...this should get you a lovely turkey even with only mininium basting...though I'd baste it every 30 minutes or so...Kate

You can slow cook the turkey at a lower temperature, but you will need to baste it periodically through out the night. Start it off at a preheated oven at 350 degrees cook turkey just until the skin is browned all over. Turn oven down to 225 degrees and baste with butter, or what ever you choose. It will be done in about 6 hours.
