Pecan Pie question?!
Answers: The recipie for pecan pie that I have does not call for blind baking the crust before filling and rebaking. I lost an old reciple in which I did blind bake the crust. I'm tired and lazy right now (1:00 am), and I just threw it in the oven without blind baking. Is my crust going to be soggy some other issue im not thinking of?
mark, you will be just find, i am a pro baker and have never seen a pecan pie with a par crust. with most pecan pies your have a high sugar content, with sugar ,corn syrup ,etc. in the science of baking sugar is considered a liquid because of the heat factor. a good 55 min at 350 should finish your pie in good shape, the top should start to crack letting out the last of the moisture. good luck and good baking ,bacondebaker
no it should bake evenly thru! If your recipe dosen't have a blind baking crust then it has ajusted the temp and made it so it would not have those issues with the crust that you spoke of!
