Odd cooking question...simple recipes for 15 oz. of pumpkin puree?!
Answers: Okay I was making pumpkin cheesecake that called for 15 oz. but I had a 30 oz. can. I don't want to throw away the rest so does anyone have any simple recipes I can use pumpkin puree for? By simple, I mean hopefully something made with ingredients typically in a kitchen as in not anything unusual that I have to go to the store for.
PUMPKIN COOKIES
INGREDIENTS
1/2 cup butter
1 1/4 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups canned pumpkin
2 1/2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Cream butter and sugar, then add the eggs. Mix well. Add vanilla and pumpkin. Set aside.
Sift dry ingredients, then blend into the "wet" ingredients. Fold in the nuts and raisins. Mix well.
Drop by heaping teaspoons onto a greased cookie sheet, bake for 10 - 15 minutes. Cool. Best eaten if you let them "ripen" for a day. Store in a sealed container.
Make two pies instead.

the best is pumpkin apple muffins at allrecipes.com.add alot of walnuts and plenty of spice. dont cut the apples too small they shrink.you can adjust the sugar to your needs.
ok, I buy pumpkin puree all year round as an easy way to get Vitamin A/Betacarotene into my 6 year old:
stir it into her oatmeal, into her pasta sauce, into her smoothie.
You only need a 1/8 cup to get all the A you need all day long!
But here i an easy recipe for Fudgy muffins:
15 ounce can pumpkin + box of chocolate cake mix + 1.2 cup water
no eggs needed !
Follow cooking time/temperature on box for cupcakes.
The cake mix will absorb the taste of the pumpkin. You will not taste pumpkin. And lots of Vitamin A in the muffin! FOr a more hoiday type muffin, use Spice Cake mix instead.
Try the persimmon brunch cake at allrecipes .com just type in persimmons in the search engine at the site. The recipe calls for two cups of persimmon. Substitute the pumpkin and it is a very nice and easy dessert and you should have everything in your kitchen already, Sugar, flour, baking powder and soda, vegetable oil and salt it doesn't even call for eggs. Very nice and moist. I substituted pie spice or all the various spices they called for. Nuts are optional.
