How do you cook a gammon shank??!
Answers: i boil mine slowly for 2hoursor more depending on weight, i serve it with cabbage[savoy] boiled potatoes melted butter drizzled over the top. my gran who was irish did it this way.
same way you would a lamb shank, very slowly is the best way..
shank just means "on the bone" really.
ask your local butcher he would know best =)
Best way is to boil it for an hour or so then make pea and ham soup!!
you can either boil it or roast it or you can even boil it for an hour or so and roast it...if you boil it it will take ages to cook but which ever way you do it it is very nice tasting
Boil it for an hour like the guy above me said, but it also works if you boil it in coke. Sounds weird I know but its really good, a Nigela Lawson one
Soak it overnight in a large bowl of cold water to get some of the salt content out. At the same time, soak some hard peas in water and a bit of bicarb. Simmer the shank for an hour - add pepper but not salt - the add peas and simmer until they start to mush. Lift out the shank - and let it cool (best sliced cold between crusty bread. Add a few mint leaves to the soup - seive or blend if you prefer a smooth soup. Eat with more crusty bread. Warning - too much pea soup gives you a musical bottom.
i simmer it and add lentils and veg to make soup when cooked ham will start to fall from bone then serve as main meal or break into soup for heartier soup can add peas instead of lentils
