Sweet Potato Pudding

INGREDIENTS:
2 eggs, separated, room temperature
1/4 cup butter or margarine
1/2 cup firmly packed light brown sugar
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
dash ground ginger
1 cup mashed cooked sweet potatoes

PREPARATION:

In a medium mixing bowl, beat egg whites until stiff peaks form. Beat yolks in a separate bowl. In a mixing bowl, cream together butter and sugar; add well-beaten egg yolks, milk, salt, nutmeg, cinnamon, ginger, and sweet potatoes.
Fold in beaten egg whites. Turn mixture into a buttered 1 1/2-quart casserole. Bake at 350° for 40 minutes. Serve with cream or a caramel sauce. Serves 4.

Sweet Potato Pudding
Yield: 8 servings

Ingredients:
1 cup Sugar
? cup Margarine
4 Eggs
2 cup Sweet potatoes -- grated
2 cup Milk
1 cup Corn syrup
1 teaspoon Vanilla

1. Grate potatoes in food processor or with hand grater.
2. Blend sugar and margarine in bowl. Add well-beaten eggs; mix thoroughly. Add potatoes, milk, corn syrup and vanilla; blend.
3. Pour into casserole. Bake in preheated 300-degree oven for 1 hour, or until knife inserted in center comes out clean. Serve warm or cold with whipped cream or ice cream if desired.

Grated Sweet Potato Pudding
Yield: 4 Servings

Ingredients:
4 cup Grated sweet potatoes
1 cup Cane syrup
? cup Sugar
1 cup Milk
? cup Butter
3 Eggs
? cup Chopped nuts
1 cup Raisins
1 teaspoon Cinnamon
1 teaspoon Allspice
? teaspoon Cloves

Melt butter in a heavy, oven-proof skillet. Mix all ingredients together. Pour mixture into the hot pan of butter, stir until heated. Put skillet in 350 degrees oven and bake. When crusted around edge and top, turn under and let the crust form again. Do this twice, allowing the last to remain on sides and top, about 40 minutes. Serve with sweetened cream or ice cream.

Sweet Potato Pudding
Servings: Serves 6.

Ingredients:
3 large sweet potatoes, grated
2 medium-sized onions, grated or minced
1 green pepper, chopped fine
2 tablespoons melted bacon fat
1/4 teaspoon black pepper
1/8 teaspoon thyme
1/8 teaspoon marjoram
1/8 teaspoon sage

Preparation:
Mix all ingredients thoroughly. Place in a greased casserole, cover and bake in a moderate (350°F.) oven for 45 minutes or until potatoes are almost tender. Uncover and bake 15 minutes longer.
