Meatloaf is one of my favorite recipes - at least for a main course - for a candy, I like my Irish Creme Fudge.

3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
2 tablespoons BBQ sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Irish Crème Fudge

3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray

In a 3 quart sauce pan - preferably enameled cast iron - melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.

Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.

Pour mixture into pans and cool thoroughly before cutting into squares and serving.

Pork Chops Recipe

Get back to the basics: The original, old family favorite. A delicious, crunchy coating and mouth-watering tender pork inside.

Ingredients
6 pork chops, thin cut
3 (4 oz) bags of crushed saltine crackers
2 eggs
1/2 tsp onion powder
1/2 tsp garlic powder
3 tbsp vegetable oil

Directions
Preheat the oven to 375 degrees F.
Whisk eggs along with the onion and garlic powder in a shallow bowl or pie plate. Dump the cracker crumbs onto a separate plate. In a large sized skillet, heat the oil a over medium-high heat. Dip pork chops into the egg first, then press in the cracker crumbs to coat evenly. Fry for 2-3 minutes per side, just until they become golden-brown. Remove and place on a baking sheet.
Bake for 45 minutes, turning once. Remove, and serve immediately.

Atlantic Salmon with 4 Cheese Sauce. Roll salmon fillet in plain flour mixed with a little mild curry powder.(1/2cup flour-1/8tsp curry).Lightly fry salmon in xtra light virgin oil on all sides until cooked. Meanwhile,in a small saucepan put 1/4 cup tasty cheese,grated,1/8 cup spicy gouda cheese,grated,small amount of Lancaster cheese( it's orange colour & is sometimes called Rubicon Red) & 1tsp of Blue vein cheese.(it adds abit of bite).Add 1 cup of milk & a few grinds of cracked black pepper. On a low heat whisk the mixture until all the cheeses melt.In a small bowl mix a little cornflour with water to make a smooth paste.(1Tsp flour & 3Tsp water)Add this to the cheese mixture just before boiling point.Make sure you keep whisking as you do this as not to form any lumps.Serve over the top of salmon with a fresh mixed salad or steamed vegies.
