Meatloaf is one of my favorite recipes - at least for a main course - for a candy, I like my Irish Creme Fudge.
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
2 tablespoons BBQ sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.
Irish Crème Fudge
3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray
In a 3 quart sauce pan - preferably enameled cast iron - melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.
Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.
Pour mixture into pans and cool thoroughly before cutting into squares and serving.

******HAWAIIAN CHICKEN
1 whole chicken or selected pieces
Dust chicken with -
1 cup flour
1 teaspoon celery salt
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon nutmeg
Brown chicken in skillet
Pour off excess oil
Pour the following mixture over chicken:
1 and 1/2 cups pineapple juice
1/4 cup soy sauce
Cover and simmer until done
Cheesy Italian Nachos
Servings: 2Prep Time: 5 minutesCook Time: 10 minutes
INGREDIENTS
1/2 cup HORMEL? Sliced Pepperoni or HORMEL? Turkey Pepperoni
2 cups bite size tortilla chips
1 cup (4 oz.) shredded mozzarella cheese
1/4 cup sliced ripe olives, optional
1/4 cup refrigerated Alfredo sauce
DIRECTIONS
Preheat oven to 375o F. Place chips in single layer on baking sheet. Top with pepperoni, cheese and olives. Bake 10 minutes or until cheese melts and chips are warmed through. Meanwhile, place Alfredo sauce in microwave-safe measuring cup. Heat on HIGH 20-30 seconds or until sauce is warm. Drizzle sauce over nachos and serve immediately. Sprinkle parsley and dried herbs on top, if desired. SERVE WITHa fresh garden salad, or as a party appetizer
Fruity-Spiced Glazed Nuts
2 Tbsp. butter
2 cups PLANTERS Pecan Halves
1 pkg. (4-serving size) JELL-O Brand Orange Flavor Gelatin
1/2 tsp. ground ginger
Dash ground red pepper
MELT butter in large nonstick skillet on medium heat. Stir in pecans.
ADD gelatin and ginger; toss to coat. Cook until gelatin is melted and pecans are evenly coated, stirring constantly. Add red pepper; mix lightly.
SPREAD onto wax paper-covered tray. Cool.
