Help with fried chicken?!


Question: I need help frying some chicken. All i want to use is flour, salt, pepper, eggs, and hot sauce. Anyone have directions? (i have a personal deep fryer)

Beat 1 egg with 4 Tbs milk or water and hot sauce to taste in a shallow bowl. Dip chicken (cut into 6 or 8 pieces) in egg mixture, drain off excess then shake the chicken pieces, one or two at a time in a small plastic bag in which you've put about 1 cup of flour seasoned with the salt & pepper. Let the chicken rest on a rack while you heat a half cup of vegetable oil in a large deep skillet over medium heat. When the oil is hot brown the chicken on each side until golden brown (about 5 to 7 minutes per side). When the pieces are brown, turn the heat to just above a simmer. Cover the skillet and simmer for about 35 minutes. Remove the cover and increase heat slightly during the last 10 minutes if you want crispier chicken. Remove pieces, drain on paper towels, and serve

instead of eggs why don't you soak the chicken in buttermilk for a few hours, then add salt and pepper to taste, and the flour. it's delicious

Don't use eggs to make batter if you want your chicken to remain crispy for longer period. Use ice cold water or ice cold beer instead. 1 cup liquid to 2 cups flour (1:2 ratio), season with salt and pepper to taste. Batter must be lumpy for coating chicken pieces. Lumpier batter means crispier chicken.
