You can freeze them, cook them later on, put in stocks, or stuffings. They are horribly unused by people. They give tremedous flavour to food. Use them, they re a great treat.

After they're boiled for the gravy, I let them cool, and give them to my dog.

I use kitchen shears to cut the gizzard and heart into little pieces and put them in the pot with the bones and scraps to make soup stock.
I also cut the liver into thin slices. This morning I had turkey liver and onions for breakfast. Yum.
