What to cook for dinner?!


Question: I have a good friend of mine, and her cousin is coming down to go out with us. I told her i'd cook dinner for us all. She tells me that her cousin is a vegitarian. Normally we eat something with meat in it. What can I cook, that's actually taste good, and doesn't have meat in it? Any Idea's?

this is so good it takes like restaurant i was amazed when i made this.

2 cups broccoli florets cut bite size
1/2 cups shredded carrots
1 small zucchini or yellow squash
1/2 red pepper sliced in to match sticks
1cup of water

sauce:
1 tablespoon butter
1 tablespoon olive oil
2 medium shallots
2 tablespoons all purpose flour
1 cup vegetable broth
1/2 cup half and half or light cream
a hand full of pamigiano reggiano or ramano cheese
salt and pepper to taste
1/2 pound penne cooked al dente (8min)

place veggies in deep skillet with 1 cup water. bring to a simmer,cover, reduce heat and steam veggie for 3 min drain and return to pan

in a small skillet or sauce pan melt butter into oil over med heat. Add shallots and saute, 2 min. sprinkle with flour and cook 1 min more. whisk in broth and bring to a simmer to thinken. whisk in cream and bring sauce back to a bubble. reduce heat to low and let sauce simmer uncovered,4 or 5 minutes. stir in cheese, salt and pepper to and fresh thyme. place veggie back on stove top add pasta and sauce to pan.

serve immediately

it's really easy it takes under 30 mins

How about a big Greek salad with some crusty rolls?

Hmm... about about some sort of pasta with a good sauce, salad, and bread.

Tortilla-Black Bean Casserole

Ingredients (use vegan versions):

2 cup chopped onion
1 1/3 cup chopped green pepper
14 oz can stewed tomatoes
3/4 cup salsa
1/2 tablespoon garlic
2 tablespoon cumin
2 15-oz cans black beans, drained
8 corn tortillas
1 1/2 cup shredded vegan cheese (opt but suggested)

Directions:

In a large skillet over medium heat, combine first 6 ingredients, bringing the mixture to a boil. Reduce heat and simmer uncovered for 5 minutes. Stir in beans. Spread 1/3 of the bean mixture over the bottom of a 13x9 pan. Top that with half of the tortillas, overlapping as necessary and half of the cheese. Add another 1/3 of the bean mixture, then remaining tortillas and bean mixture. Cover and bake at 350 for 30 minutes or until heated through. Sprinkle with remaining cheese and let stand for 10 minutes. Garnish with shredded lettuce and chopped tomatoes. For more of a Mexican flair, add slices of avocado on top or your favorite guacamole.

I tend to think that if you make either chilli, curry or a lasagne using only vegetables instead or meat it can actually be tastier than the traditional way of making it.
Or you could make egg fried rice with loads of veg in it and plain curry sauce for the veggie and if you still want meat steam a few chicken fillets, chop them up and throw them into the remaining curry sauce, that way everyone is happy.
