What are some one or two bite creative desserts that don't require a fork or spoon?!

You'd need to pick probably 3 -4 different desserts that together create a harmony with the rest of your meal.


Personally, I'd go with a variety of fancy shaped (snowflakes, trees, stars, angels, etc) home made sugar cookies (my crowd likes cinnamon flavored);
a cherry and pineapple kabob on frilly toothpick or brownies;
Ginger bread/spicy carrot cake bites or fruited mini muffins.

Other ideas you might want to consider: Forgotten cookies;
Wedding cookies, various brownies, chocolate coated (dipped) anything, variety of cookies, fruit cake balls, date nut balls, peanut butter balls, mini eclaires, mini cream puffs, mini cheese cakes, sugared nuts, shaped mints.

Depends on budget; bakers; place of purchase for finished desserts. Would probably figure on 4 servings per person although 3 would probably be closer to the mark. Have more of least expensive desserts, variety of platters for display. Vary textures, flavors, etc. Depending on time on table-- you might not want to serve anything that needs refrigeration.

Chocolate truffles! I have made them for several holiday ties and they were an incredible hit. One lady was wearing a fancy jacket and was seen stuffing a couple into her jacket.

They are beautiful when placed on three stacked pedestal platters, al la Martha Stewart style.

really, the sky is the limit. Go to your grocery store and look around and ask yourself, does this need a fork or spoon to eat it? and if the answer is no, then, there you go.

What about a bowl filled with dark red as well as green grapes(all seedless) this is pretty festive looking, easy and nutritious

Chocolate dipped strawberries, orange slices, (1/2 way up the fruit). mini cup cakes dusted with powder sugar instead of icing.

If you really want to wow your crowd you can do what I do. Its a lot of work but people will be talking about it for years! Its a rolled out sugar cookie recipe from Alton Brown and I swear by it!!!

When I do a finger dessert buffet, I make lemon squares, chocolate crinkle cookies, mini meringues, which can be made in several flavors, madeleines, and truffles in a couple flavors (they all start from the same chocolate base). I also buy chocolate cordials in a couple flavors, or choclate covered coffee beans.

There are some great Christmas desserts that can be made little. Mini-cheesecakes, pecan tasties, cream puffs, cannolis, christmas cookies, meringues, puff pastry shells with chocolate mousse, truffles, fudge, butter crunch, chocolate dipped fruit, chocolate dipped candy canes...The sky is the limitHappy Holidays.

How about those frozen puff pastries you can get in bulk at Costco or BJs or in smaller quantity at Acme and others? Tiny Delizza Belgium Mini Eclairs, and cream puffs filled with chocolate, strawberry, or vanilla cream are great! Very decadent and light at the same time. Even the container is cute.

Remember: mini puff pastry shells are available in your grocer's freezer. Fill them up with anything from cheesecake, to fudge, to a few pieces of fresh fruit with a glaze, and they will be pretty and festive and delicious.

My cousin is a professional caterer, and her beautiful one is Tuxedo Strawberries.

Take a large strawberry with the stem on, dip the front in melted white chocolate, let cool in the fridge. Then dip each edge in dark melted chocolate to form a V. Let those cool in the fridge. Then take a pastry bag with a very small tip, and carefully pipe 2-3 buttons and a bowtie (a sideways 8) on the white part.

They're a little time consuming, but can be made in a night with 2-3 people helping, and they were always a hit!

Any cake or brownie recipe can be downsized to muffin pans or even to teeny-weeny mini muffin pans. You can make the batter exactly as you would for a full size pan of brownies or for a whole cheesecake, but simply pour the batter into greased and papered (those little muffin papers) muffin tins. Just be prepared to watch them bake more carefully than you would a full-size container, as it will only take 20-30 minutes for them to finish cooking.

If you're making a cheesecake or a pie, instead of the standard crust (which you could buy frozen and simply cut out muffin-sized portions to line your muffin papers), I think a far simpler crust remedy is to crush cookies like ginger snaps or vanilla wafers in a food processor. Combine the crumbs with a few tablespoons of butter (5 TB butter for 3 cups of crumbs) and simply press the mixture in the bottom of the paper liners.

I've attached a link for a pumpkin cheesecake that I make at Thanksgiving and Christmas every year - it's a SURE crowd-pleaser!

I made mini cheesecakes for a baby shower once. I used the instant cheesecake mix and mini cupcake liners. I added chocolate chips and strawberry (the kind that comes frozen) on top. I also left some plain. They were a huge hit! I would recommend letting them set in the fridge, and putting them in the freezer for 1 hour prior to serving.

cheesecake in muffin cups. use a vanilla wafer and use a refrigerator cheese cake mix, place wafer in cup pour mixture over and place in fridge.
