Refer to above answers... If it were me... I would just cook a lot...
remember some if not most of those 75 will have one of everything you are serving... especially since they are "mini"
Good Luck

years ago, i wrote a computer program to figure out any recipe and convert serves 8 to serves 75

it's called recipcal and it's shareware

meatballs: 50-75
chicken & pineapple kabobs: 25-30
drumettes: 50
roast beef - mini sandwiches: 25-30
turkey - mini sandwiches: 25-30
potato chips (how many bags): 6
corn chips w/ salsa: 6 bags
seven layer dip:15-20cups
bread bowls w/blue cheese and ranch dressing: 10

Assuming that everything above is a one or two-bite item, you need to have roughly 3-4 servings of food per person per hour, possibly 4-5 servings if alcohol is being served or if your guests are part of a "heavy eating" demographic (ie teenagers). This is an approximate rule of thumb for caterers.

Also, pace the food - don't put everything out all at once. Rather, rotate items throughout the party.
