Surf and Turf

I am going to make Beef Olives with Lyonnaise Sauce

Ingredients (for 2 servings)

2 thin slices of sirloin steak
3 tbsp olive oil
? large onion, finely chopped
6 button mushrooms, finely sliced
dash of soy sauce
dash of Worcestershire sauce
4 tbsp white wine
splash of chicken or beef stock

Method

1. Preheat the oven to 220C/425F/Gas 7.
2. Heat a little oil in a small saucepan and sauté the onions until tender with a little salt and pepper. 3. Heat a little more oil in a small frying pan and sauté the mushrooms until golden.
4. Lay the slices of beef out on a clean surface and season with salt and pepper. Place a spoonful of the sautéed onion and the sautéed mushrooms on to each steak, roll the meat up and secure with cocktail sticks. Heat a little oil in a frying pan over a moderate heat and seal the two rolls of meat on all sides.
5. Transfer to a roasting tray and cook in the oven for 10 minutes, pouring the soy and worcestershire sauce over the meat in the last 2 minutes. Remove the meat to a warm plate and allow to rest.
6. Add the remaining sautéed onions to the roasting pan and place over a gentle heat. De-glaze the pan with the wine and stock and allow to simmer for 2-3 minutes. Season with salt and pepper.
7. Serve each roll in the centre of a warm serving plate with the onion sauce poured over and the remaining sautéed mushrooms scattered around each plate. Eat at once.

Delicious, cheesy lasagne. But I don't get home thill 10:30 tonight, so I'll settle for a bowl of my homemade turkey noodle soup.

I'd cook anything my husband asked me too, even fish which I usually refuse, if only he was home :'(.

I would like to have some great homemade tomato basil soup, a piece of crunsty french bread and a nice tossed salad (with a glass of wine).

i wish i felt like cooking but i don't but i'm making a pot of beans in my slow cooker and making my spicy cheesy cornbread!
