If you are serving buffet style, ask the pizza place to cut your pizza in squares, easier to handle and smaller pieces for your guests to pick up. A large 10 slice pizza can easily get 20 sq pieces, 10 pizza should be more than enough cut this way. Ham and cheese approx. 2 thin slices ham, 1/2 cheese, slice on dinner roll. 15 doz., 5lb ham, 2 lbs cheese, large veggies tray (make your own cheaper) several bunches celery, 2 bags of baby carrots, 2-3 bunches broccoli, several yellow squash, couple packages of grape tomatoes, slice cucumbers. Dip, sour cream and soup mix. Lg. jar of pickles, cut in slices.
15 tins of butter cookies on trays should be plenty.
Add a tray of fresh fruit slices with lowfat vanilla yogurt to dip fruit. Good thing, there is always a grocery store near by for emergencies. I have done many gatherings and have tried to plan without going short or over buying. People will eat what is there, if you run out, they will eat
something else. Add some chips for fillers. Most importantly, keep it simple so everyone can enjoy themselves.

Just come up with the number of each item you think each person would eat or drink during the party and then multiply that number by 230. For instance, if you expect that each person might have 3 drinks during the course of the party (and each drink is 10 ounces) then the math would be......3 drinks x 10oz. x 230 = 6900 ounces or 54 gallons

Wow, good for you, I must assume (without making an a of myself that you have many good helpers here are really convening this affair). You really really need a professional caterer but again I must assume this is not the first time this has been done. I've never gone beyond 100 myself & I must say with great volunteers. Here goes:

for 100 - you do the rest of the math;

Beans: baked or canned - 4 # 10 cans
string beans canned - 4# l0 cans or
24 lbs fresh or 6 40 oz packages frozen

Beef or Veal Roasted: 40 lbs
Beets: canned - 4 # 10 cans
Butter: Now that all over the place minimum in little squares
2 lbs but if you are in the South that blows that one.
Cabbage: For salad - 16 pounds
Carrots: 24 lbs
Coffee: 2 1/2 lbs - again, if you'r in the South, they love it!
Corn: canned - 4 #10 cans
Crackers: 4 pounds
Cream for the coffee: minimum 3 quarts again the South
Cream: for whipping 1/2 gallon
Fruit cocktail: 4 #10 cans (hope you have a lot of guys
volunteering to open cans here)
Ham: ready to bake 40 pounds
Ice Cream: 4 gallons
Jam & or Preserves: 6 - 1 pound cans
Lettuce: 20 heads
Ground Beef for meat loaf: 18 pounds
Peas: canned 4 -#10 cans
frozen 6 - 40 oz packages
Pork Roast Loin: 36 pounds
Potatoes: Mashed - 30 pounds
Scalloped 25 pounds
Salad - 30 pounds
Chicken: for creaming or salad - 36 lbs
for roasting - 60 lbs (includes frying & BBQ)
Gravy: I give up on this one doesn't matter what you say
there is never enough.
Rolls: 16 dozen
Salad dressing: 4 quarts
Soup: 6 gallons
Sweet potatoes for candying: 40 lbs
Tomato juice or V8: YES! 4 #10 cans

This is just a gauge as to the direction you are travelling in but I think as far as quantities go you have a good idea of what you may need. Our church did this annually in August and at 8:30 in the evening all the left over meats, vegetables, rolls & soups were raffled off. We served twice; first at 5:00 pm & second at 7:00pm (used paper to spread on tables) All the teens/male & female were in the kitchen washing the cutlery and boy do they have fun!. The plates were paper just like the tablecovers but the cutlery was real. At 8:30p.m we held an auction and most of those who had been at the first sitting had stayed around to chat & visit with old friends. Minimum bid was $5.00. Everything was sold (some things we didn't even put up for the auction like pickles, fruit & cheese). Wonderful, the money went back into the community to assist with the elderly and sick and the unemployed with their families were never left out.

I wish you well and hope these guidelines help i.e. try substitute the beets for pickles. You can't use everything but I don't know your community, perhaps you can. Remember this is just a guideline for 100 folks.
