These days people are getting very creative in planning wedding menus that can handle a budget but are still unique. Here are some examples of what some of our clients have been doing ...

1. The Cocktail Party: instead of a full meal, host your wedding just a bit later than the average dinner hour, 7-8pm, and serve only heavy hors d'oeuvres and unique signature cocktails. Those who are hungry can get filled up, but most have probably already eaten dinner. The cost savings is not specifically in the food, but in other areas. For instance, you don't need as many tables and chairs, and can go for more of a swanky lounge feel. You also save on plate, glass, flatware, and linen rentals.

2. The Dessert Party: Go even later into the evening, and serve desserts only. We recently did a small wedding featuring the colors pink and chocolate brown, so the entire menu was chocolate, and all the beverages were pink (pink lemonade, pink champagne, a pink martini, etc.). It makes for a very glamorous and grown up evening on a shoestring budget.

3. The Brunch: Another huge trend is the wedding brunch. Brunch foods are traditionally less expensive than other meals, and even the bar can keep it simple with OJ and champagne (separate or mixed into mimosas), Bloody Marys, and gourmet coffees.

Those are just a few ideas, but if you're already down the path of a dinner buffet, I suggest doing something Italian. Mnost everyone will enjoy it, and if your facilities allow for it, you can do a custom pasta bar. Staff it with a chef, and guests can choose one of three pastas, one of three sauces, and a variety of mix-ins (vegetables, meat, chicken, etc.). This is actually quite inexpensive, but can be a wonderful treat for all your guests - plus classy. It will look like you did it intentionally instead of in the interests of budget.

Good luck ...

Soup, salad, Roasted chicken, vegetables, mashed potatoes, and desert!

Roast Beef, Roasted Chicken pieces, fish or ham, rice, potatoes, 2 vegetables like carrots and broccoli, 2 types of salad, buns, and pickled things. This way there is leftovers to make cold sandwiches for the midnight buffet by putting out cheeses and more buns.
