Finger sandwich ideas?!


Question: I will be making finger sandwiches for my work Christmas party and would like suggestions for fillers besides tuna salad, egg salad & chicken salad. I have the little mini bread loaves. Thanks for your ideas and Merry Christmas.

HAM 'N SWISS FINGER SANDWICHES

1 pkg. Pepperidge Farm finger rolls or any sm. egg base rolls, softer ones work better
1 lb. Oscar Mayer sandwich ham
8 to 10 slices Kroger aged Swiss cheese
1 stick butter
2 tbsp. minced onion
2 tsp. mustard
2 tsp. Worcestershire sauce
2 tbsp. poppy seeds

Melt butter. Stir in onion, mustard, Worcestershire sauce and poppy seeds. Split rolls and spread with mixture. Add ham and Swiss. Microwave on high for 1 minute or until cheese begins to melt. Enjoy!

BENEDICTINE FINGER SANDWICH

1 (8 oz.) pkg. cream cheese, softened
1 med. cucumber
2 green onions
1 scant tbsp. mayonnaise
Pinch of salt
2 or 3 drops green food coloring

Seed cucumber. Put small pieces in blender with onion and mayonnaise. Puree or liquify 2 or 3 minutes. Strain and combine with soft cream cheese; blend well. Add food coloring and blend again. Spread mixture on thin sliced white or wheat bread. These may be made ahead of time and frozen until needed. Yield: 4 servings.

VEGETABLE FILLING FOR FINGER
SANDWICHES

1 c. celery, chopped fine
2 tomatoes, chopped fine
1 green pepper, chopped fine
1 med. onion, chopped fine
1 cucumber, chopped fine
1 tbsp. gelatin
2-3 tbsp. boiling water
2 c. mayonnaise

Combine the vegetables. Dissolve the gelatin in a small amount of cold water. After this has dissolved, add 2-3 tablespoons boiling water. Mix this with the vegetables, salt to taste. Add mayonnaise and mix well. Refrigerate overnight. Keeps 4-5 days. Serve with party breads or crackers.

cream cheese and olives

you could do cold cut type meats........ mustard's, mayo's on the side......... there are also cream cheese and cucumber sandwiches........ but have to find something that everyone will like, so , stick with the faves of the season......

Cucumbers with mayonnaise and herbs are a classic. You can also make holiday sandwiches with turkey and cranberry sauce. Cream cheese with herbs and seasonings and salmon is another good one. Roast beef with mustard or horseradish sauce is tasty too.

How mini open sandwiches, some roast beef, with swiss cheese, and a drizzle of gravy.

Surprisingly – I do love plain finger sandwiches especially chicken mayo or good old cucumber sandwiches! Such comfort food …

Drizzle capsicum and tomatoes with olive oil and roast in the oven on high for 10 – 12 minutes. Remove burnt skin, slice thinly and drizzle with balsamic vinegar, lemon juice. Add a pinch each of salt and pepper. Marinate for about 30 minutes or so, then top off on toasted bread rolls.

Using this simple recipe as a base, be creative -- add slices of shrimp, salmon, ham, etc. on top of it.

If you want to keep it vegetarian, top off with cubes of mango or grapefruit. The sweetness will play a great contrast to the piquant taste!
