What can i bring for my potluck this week?!

Answers: my work is putting on a potluck this coming up thrusday and i m supposed to bring a main dish,( i was n vacation last week and wasnt here to put my name under anything else) so now i have to come up with a main dish to bring to work thrusday, but the catch is, we dont have any ovens out here. we have microwaves so i can reheat at lunch time, but what can i make the night before that will still be good and not dry the next day at lunch time after being refrigerated and reheated? should i just bake a turkey or chicken? we work in a secured area that you have to pass security to get in so i cannot have someone bring it to me before lunch tme, i have to actually bring it with me in the morning. and i wake up too early to make int in the morning. i would have to wake up at 3 am..im not doing that!!

make some meat balls in a crock pot- main dish just means some kind of meat anyway
get some frozen meat balls and put in crock pot with one jar chili sauce and one can jelled cranberry sauce- this is good for one bag of meatballs- double up on ingredients of you're having a large group
otherwise you can do sliced ham in a crock pot with some rolls
sloppy joes in crock pot with buns
shredded beef or turkey in crock pot with rolls
buy kfc bucket of chicke everyone luvs that its the hit at my pot luck parties
Buy some Italian sausage, about 2 pounds. Bake it at 375 until cooked, about 30 to 45 minutes. As it cooks, prepare about 3 pounds of pasta. Also, prepare a bag of frozen zucchini, squash and red onion. After everything is done, slice the sausage and add it and the cooked vegetables to the pasta. Make sure to put this in a couple microwavable dishes. Cover with your favorite jar of pasta sauce, and season to taste. When you get to work, microwave each dish separately as needed.

Easy Chicken Casserole
4 chicken breast cooked and shredded
1 can cream of chicken + mushroom soup
1 8oz sour cream
2 cups shredded cheddar cheese
1 Sleeve Ritz Crackers + 2-3 tablespoons melted marg.
Poppy Seeds to taste
You can cook the chicken in crockpot if that is easier or you can boil it. Cool and then Shred.
Combine soup, sour cream, and cheese and then mix in shredded chicken. Place in a casserole dish . Crumble ritz and marg. and spread on top of chicken mixture. Sprinkle with poppy seeds. Bake 30 mins. @ 350 degrees.
Just heat in microwave the next day and serve.
COLD PASTA AND CHICKEN SALAD OR SHRIMP
SALAD
8 oz. vermicelli pasta noodles
1 c. French dressing
10 fresh sliced mushrooms
1 c. fresh broccoli florets, blanched
10 slices cherry tomatoes
Ripe olives (sliced)
1 can sliced artichoke hearts
2 c. cooked cubed chicken (or boiled shrimp)
1/3 c. fresh basil (or 1 1/2 teaspoon dried)
1/3 c. toasted pine nuts, optional
Cook pasta, transfer to mixing bowl. Add 1/3 of the dressing and toss well. Cool and chill 3 hours. In another bowl, mix mushrooms, broccoli, tomatoes, olives, artichokes with remaining dressing. Chill. Add chicken, basil, nuts. Mix with pasta.
Everyone brings a meat dish. Why not bring a fruit tray or fruit salad. Fruit salad only requires opening some cans of tropical fruit or fruit cocktail. Add a few bunches of fresh seedless grapes, chill, and walla you have got the most popular dish on the table.
