Tart filling ideas?!


Question: I have lots of little tart shells.

I need several different ideas for how to make little fillings (and garnishes) that look good and are yummy!

I can bake the shells by themselves or with filling inside.

Chocolate Tart

1 cup heavy cream
2 cup chocolate chips.

Creme Anglaise

4 egg yolks
3 tablespoon sugar
2 cups heavy cream
1 vanilla bean
1/4 cinnamon
1 teaspoon nutmeg

1-cooked apples flavored with cinnamon, clove, raisins & nuts...
2-cream cheese/cheesecake filling
3-rasberry jam filling

Apples
Peaches
Pears
caramel
custard
cheesecake
blueberries
cherries
bananas
fudge

FRUIT FILLED CHEESE TARTS

1/3 c. butter
1 1/2 c. flour
1 (3 oz.) cream cheese
4-5 tbsp. water

Cut butter and cheese into flour, add water. Form into ball. On lightly floured surface, roll 1/8 inch. Cut into rounds, press into pans. Bake at 400 degrees for 12-15 minutes. Cool in pans.

FILLING:

1 (11 oz.) can mandarin oranges, drained
1/4 c. sugar
1/8 tsp. salt
1/4 c. almonds (optional)
1 (8 1/4 oz.) can crushed pineapple
5 tsp. cornstarch
1 tbsp. lemon juice
Few drops almond extract (optional)

Reserve 16 orange sections, chop rest. Drain pineapple; save juice from both. Combine sugar, cornstarch, salt and juice. Cook and stir until thick plus 2 minutes. Cool. Stir in mix of fruit (and nuts if used). Spoon into tartlets and top with orange sections. Serves 24.

oOh...i just watched that take home chef last night...and he made this REALLY easy Filo Lemon Curd Tart with Fresh Raspberries...here's the recipe...

If its for dessert, bake the tarts then fill them with any kind of jam and top with slivered roasted almonds. So Yummy!

Or you can use the caramel recipe below and they come out like little creme brulees!

1 cup brown sugar (firmly packed)
5 tablespoons plain flour
1 1/2 tablespoons butter
1 teaspoon vanilla essence
2 egg yolks
1 cup milk
1 (9 inch) pastry shells (prebaked)


1. Put brown sugar, plain flour, butter, vanilla essence and egg yolks into a medium saucepan and mix well together.
2. Slowly add milk beating well (don't worry if mixture appears to curdle - it usually does).
3. Put over a medium heat and stir continuously until it thickens and has a rich glossy brown colour, about 10 to 15 minutes.
4. Let cool and pour into ready made cooked pie pastry shell.

5. OPTIONAL EXTRA (MERINGUE TOPPING).
6. Beat 2 egg whites till soft peaks form, slowly add in 4 tablespoon sugar until glossy and have stiff peaks.
7. Spoon meringue onto caramel, making sure it covers the pastry.
8. Put into a hot oven (200 degree C) and bake till golden - should only take a few minutes.
9. Cut and serve with thick cream.

Let's see...since most people gave you sweet ideas...I'll go for the savory ones...

1. Sundried tomatoes & cream cheese spread (Take a small bottle of sun dried tomatoes packed in olive oil. Drain the oil and proceed to chop up the tomatoes, combine with cream cheese. Add in 1 T. toasted pinenuts & 1 tsp. garlic powder to the mixture. Use a small spoon to put the filling into the tart shells.)

2. Prosciutto ham & sliced figs (Take a small package of prosciutto ham slices and chop them up. Take a package of dried figs, slice of the stem and slice them up. Place a few slivers of the prosciutto ham at the bottom of the tart shell and then top off with a few slices of the fig, drizzle a little clove honey on the top of each tart after filling them).

3. Smoked salmon tarts (Take a package of smoked salmon
flake it up with a fork, place some at the bottom of the tart shell. Then, take a small dollop of creme' fraiche' on top. Garnish with 2-3 capers & a small sprig of fresh dill).
