What do you feed 21 people for Christmas dinner?!
Answers: I have it every year. Past years I've done BBQ beef, lunchmeat trays, pasta, subs, turkey and just finger foods. I need a new idea!
Chicken Kabobs are a big hit. You can put fruit or veggies on them.
Honestly, I'd do either one or two hams. Ask everyone to bring something. Either that, or I'd do a takeout from someplace everyone likes!
do a turkey
do a ham
keep it to 3 courses.
maybe a riccotto starter (pasta stuffed with spinnach)
turkey and ham for main course with all the usual trimmings.
deserts the eay part
I agree with the person that said to ask everyone to bring something.
As if the holidays aren't stressful enough for most of us, then we end up stressing over what we will cook, lol!!
We do this every year because we all have picky eaters in the family so we talk about what all we want to have and we each take a few things that we will cook.
It works out great!
BAKED STUFFED MUSHROOMS
1 stick butter
1 small onion, minced
3 tablespoons Parmesan cheese
1/3 cup sweet Vermouth
1/2 teaspoons Worcestershire sauce
1 cup plain bread crumbs
1 lb. mushrooms (remove stems and finely chop)
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon garlic powder
1/4 teaspoon oregano
Melt butter in skillet. Cook onion until translucent. Add chopped stems. Sitr in bread crumbs, seasonings, and cheese. Brown lightly. Add sweet Vermouth last. Toss lightly to combine well. Stuff mushroom caps with mixture. Bake at 350°F for 15 minutes.
CORN CASSEROLE
1 can creamed corn
1 can whole kernel corn
8 oz sour cream
2 sticks butter, melted
3 eggs, beaten
1 box jiffy corn muffin mix
Preheat oven to 350. Grease 11x13 baking pan. Combine all ingredients. Bake for 45-60 minutes
Tamales!! They come in pork, chicken and cheese, and they are just plain fun to eat. sides are chips, guacamole, refried beans and rice. Don't worry about picky kids. Let the little brats go hungry if they don't like it.
