Answers: ok so i just posted a question about mac and cheese but i looked through my fridge...and found more cheese!...LOL i found extra sharp cheddar cheese...its white...and mild cheddar cheese...also white....would those two be good mixed together?..i was thinking of putting 2 cups of mild and one cup of extra sharp...good?...or just stick with one.....
mixing cheeses would be a good idem. the 2 would taste great together. serve it with nice french bread.

It's a bit of a waste. It's like mixing a bottle of good Shiraz with a bottle of cheap Baby Duck.
Use the white sharp cheddar in the sauce, then you have to use quite a bit less. It will make it less greasy and fatty and it will have a beautiful white colour. Bake the two mixed grated cheeses on top of the macaroni, so you have a nice marbled pattern on top.
Mix them together.
