I've been asked to make dessert...?!


Question: ... at my fiance's family dinner for christmas. Im not real worried about it, im pretty good in the kitchen. I just dont know what to make! There will be about 15 of us at dinner. i have too many ideas... could you help me narrow it down??

a) Candy cane cake - White cake with a red peppermint swirl
b) cheesecake - probably a chocolate chip or just NY style.
c) Chocolate Chess Pie - ive never made this, but my friend thinks its a great idea.

I would suggest Candy Cane Cake, especially since you are going to be traveling 3 hours one way.

It sounds festive and mouthwatering.

Whatever you decide to make, I know it will make a great accompaniment to anyone's dinner.

d) Candycane cheese cake sounds great! BUT how could you not include the CHOCOLATE STRAWBERRIES? those are the best, everyone loves chocolate strawberries =)

go for the candy cane cake. I've seen this same thing (or something like it) in a williams-sonoma store. It looked and tasted excellent. go for it

How about a trifle? That makes such a beautiful, festive dessert for the holidays.

This is my favorite trifle recipe and it does look beautiful and should serve all 15 of you.

Raspberry Trifle

INGREDIENTS
○ 1 1/2 cups heavy cream
○ 1/4 cup white sugar

○ 2 (8 ounce) packages cream cheese, softened
○ 2 teaspoons lemon juice
○ 1 1/2 teaspoons vanilla extract
○ 1/2 cup white sugar

○ 1 (10.75 ounce) package prepared pound cake
○ 2 (10 ounce) packages frozen raspberries, thawed
○ 2 tablespoons unsweetened cocoa powder, for dusting

1. In a medium bowl, beat cream with 1/4 cup sugar until stiff peaks form. In another bowl, cream together cream cheese, lemon juice, vanilla and 1/2 cup sugar. Fold 2 cups of whipped cream into cream cheese mixture. Reserve remaining whipped cream.
2. Slice pound cake into 18 - 1/2 inch slices. Drain raspberries, reserving juice. Line the bottom of a 3 quart glass bowl or trifle bowl with one-third of the cake slices. Drizzle with some raspberry juice. Spread one-fourth of the cream cheese mixture over cake. Sift one-fourth of the cocoa over that. Sprinkle with one-third of the raspberries. Repeat layers twice. Top with remaining cream cheese mixture, whipped cream and sifted cocoa. Cover and refrigerate 4 hours before serving.

I decorate the top the a few fresh raspberries and some pretty mint leaves to make it really festive looking.

NOTE: Well, get yourself a pretty glass bowl real soon. No kitchen is complete without one - VBG. I just bought a trifle bowl from Pampered Chef and Iove it. You don't have to use the base and it comes with a snap on cover, so it could be used for MANY things.

How about an ice cream cake, use a layer of ice cream sandwiches, top with cool whip, drizzle Herseys magic shell chocolate and carmel ice cream syrup on this and then make another layer the same way. You can make this as big or small as you wish. Merry Christmas.

Cheesecake, for sure...I just ate some and I don't know anyone that doesn't like cheesecake. You could garnish it with a little whipped cream and caramel syrup to make it pretty :) Another popular recipe at my family functions is carrot cake with cream cheese frosting. It's supermoist and makes great left overs for the family. Here's a great recipe:

Hmm I love cheese cake you should do b cheese cake choclolate the NY style

Cut out sugar cookies with frosting and decorated up pretty with sprinkles.
Those are always great at Christmas and are not too heavy after a big dinner.
People can eat them later and not have to dirty another plate and fork.
And you can make enough in one batch for the whole crowd.
The candy cake cake sounds interesting.

How about a minty tiramisu? That could be amazing!

The Candy Cane Cake sounds good but I have to suggest the dessert that I'm known for. It's quick to prepare and travels well.

Pudding Fluff
2 cps milk
2 sm box of Jell-o Instant Pudding any flavor you choose
16 oz container of Cool Whip
Graham Cracker or Oreo Cookie Crust

Put the milk in a mixing bowl, add the pudding mix. Whisk until blended, quickly fold in the Cool Whip. Scoop into the graham cracker or Oreo crust and refrigerate. This is also good frozen.

Cheesecake version, use a potato masher to blend 8oz of softened cream cheese into the milk before adding the pudding mix and use Vanilla pudding. I like layering the cream cheese version with chocolate. A can of berry or cherry pie filling is real good over the cream cheese version.

Layered options, put half the fluff mix in the serving dish, then add a layer of;
1 cp mini marshmallows OR
10-12 sandwich cookie bits (Oreo, Nutter Butter, etc.) broken but not crushed OR
1 cp fruit – raspberries, strawberries, mandarin oranges, pineapple, bananas OR
Spoon the rest of the fluff over the layer. Top with dabs of Cool Whip and a little of the filling.
The original recipe said to use Chocolate pudding but I think it could be good with other flavors too. Get creative and see what you come up with.

Yummy Berry Topping
1 lb fresh strawberries OR 2 cp of frozen strawberries
1 can raspberry pie filling
Cut up the fresh berries or thaw the frozen ones and cut them up. Mix the strawberries with the pie filling and serve it over the cheesecake, vanilla or chocolate versions. Great with a container of blackberries added in. Could also be used as a layer in the above option.

I don't think the cheesecake would travel that well. Of your above suggestions I'd go with the Candy Cane Cake, but personally I don't really like cake, I'm more of a pie girl. Can't go wrong with pie for Christmas.

Make Bananas Foster. It is good, easy, and showy!

6 Tbs unsalted butter
1 C light brown sugar
6 ripe bananas peeled, sliced lengthwise, and halved
1/4 C banana liqueur
1/2 C dark rum
1/2 tsp ground cinnamon
1 pint vanilla ice cream

Belt the butter in a large skillet over med/low heat. Add the brown sugar and stir until it completely dissolves. Lay the bananas in the ban and cook both sides until they become slightly soft, and begin to brown.

Remove the pan from the heat, and add the banana liqueur, and then the rum, and the Cinnamon.

Ignite the alcohol either by tipping the pan slightly over a GAS cook-top, or carefully ignite with a long kitchen lighter. (Careful that there is noting flammable close to your cook top). Put the pan back on the burner, while the bananas flambe, and cook until the flame dies out.

Divide the ice cream into dessert bowls. Gently lift the bananas from the pan, and divide among the bowls, on top of the ice cream. Spoon the sauce over the top of each dessert, and serve immediately.
