OK...this is my friends signature snack recipe...so I won't take credit, but it is delicious, quick...and very cheap.

Get a big bag of tortilla chips....I prefer Tostito scoops...

2 small cans or 1 large can of Hormel chili (without beans ! - yuk)
1 small Velveeta cheese brick.....

Just melt the cheese into the chili...and scoop.

I'm telling you this is delicious....and it goes perfect with copious amounts of beer.

well make chips and salsa with roltel and velveeta cheese
sandwiches that can be made ahead of time is always good

1 Cobb Bread
2 Bread sticks
300mls Sour Cream
French onion soup mix
Spring vegetable soup mix
1 tsp crushed garlic
chopped spinach (fresh Or Frozen)

Mix Sour cream, spinach, Soup mix x 2 AND Garlic in a bowl. Refrigerate overnight. Cut centre from cobb and fill with mixture. Place torn (inside) cobb & sliced bread sticks around filled cobb on serving plate. ENJOY

go to sams/costco and buy frozen chicken wings- cook according to directions and cover with hot sauce or bbq sauce or do 1/2 and 1/2.
Buy a fruit tray and a veggie tray.
Buy tortia chips and serve with a side of salsa and in a crock pot melt some cheese and add a can of hormel chili.
All of these are easy and delicious.

Have you ever served "Bugs on a log"? Celery sticks cut into approx 3 pieces, spread with peanut butter, and lay 3 - 4 raisins (bugs) on the top.

Scalloped Potatoes

4-6 medium to large potatoes
2- 2 1/2 cups of grated colby jack cheese or medium cheddar
1/4 cup of water
salt
Crisco

Preheat oven to 350 F. Grease a 9 x 13 glass pan with Crisco on the sides and bottom. Peel and wash the potatoes. Then slice them up, preferably by a salad shooter, but if you don't have that then slice them to about 1/3 inch think chips. lay them flat on the bottom of the dish until you have about an 3/4 to an inch thick layer and lightly salt them. Next put cheese on top until it barely covers all the potatoes. Make two more layers like that one. For the last layer you can put a thicker layer of cheese if you want to. Add a fourth a cup of water to it and then cover the 9 x 13 with aluminum foil and cook for 30 minutes. After 30 minutes take off the aluminum and cook for another 30, then voila ready to serve. makes about six to eight servings.

These are my last minute, easy appetizer ideas.

Mixed nuts in a bowl.

Chips and salsa.

Hummus quartet from Trader Joe's with a bag of raw mixed veggies, crackers and pita bread slices.

Go to the deli and pick out about 4 slices of a bunch of different cheeses. Have them slice it into individual pieces (trust me, this is way cheaper than buying a cheese tray and more variety) Buy a summer sausage log and have them slice it also.

Put either little smokies or a bag of frozen meatballs in bbq sauce in a crockpot with toothpicks next to it.

Make a couple tuna, egg salad, turkey, hummus sandwiches and cut them into 4 squares.

Buy a frozen pizza and cut into bites.

Beat cream cheese and a jar of marshmallow dip WELL and serve with fruit chunks.

I make yummy and pretty easy buffalo wings.
Get a package or two of party wings at the grocery store, fry in oil for 25-30 minutes (no coating on the chicken). In a bowl melt 2 sticks of butter, put in a packet of Mc Cormack's buffalo wing spice mix, add about 10-15 shakes of Tabasco. Put the cooked wings in the mixture, set out a side of blue cheese or ranch with some celery slices and there you go!
They are really good and very easy!

Try crudeties with dips, they are much more heatlhy than most other things. Also, they contain less calories too.
