What should I have besides cake for my birthday?!


Question: It's this Friday...I want something at least slightly better for you than cake and frosting and ice cream. Perhaps a fruit kind of thing or something...it's only a family party, just 5 of us. Any ideas?

Fruity muffins.

Banana muffins
Makes 10
Preparation time less than 30 mins
Cooking time 10 to 30 mins

Ingredients
75g/3oz melted butter
250g/9oz self-raising flour
1 tsp baking powder
? tsp bicarbonate of soda
pinch of salt
? tsp ground cinnamon
? tsp ground nutmeg
115g/4oz caster sugar
1 tsp vanilla extract
2 large, ripe bananas
2 medium eggs
125ml/4fl oz milk
10 walnut kernels (optional)
To serve
2 bananas, sliced
50g/2oz walnut kernels
2 tbsp crème fra?che or yoghurt
2 tbsp runny honey



Method
1. Heat the oven to 190C/375F/Gas 5. Melt the butter and allow to cool. Mash the bananas well. Sift flour, baking powder, salt, cinnamon and nutmeg together in a large bowl, add caster sugar and stir through.
2. With a fork, beat together the eggs, vanilla extract, melted butter and milk in a second bowl. Add the mashed banana and stir through.
3. Make a well in the centre of the dry ingredients and add the egg mixture, stirring roughly with a fork (don't over mix) until it is a lumpy paste.
4. Set paper cases into the moulds, or grease the moulds well with a little extra oil or butter and spoon in the mixture until almost full. Top each one with a walnut kernel if you like.
5. Bake for 20 to 25 minutes or until the muffins come away from the side of the pan when touched. Rest the muffin tray on a wire rack for five minutes then remove the muffins and leave on the rack for another five minutes before serving.
6. Serve the muffins with sliced banana and a dollop of creme fraiche, scattered with walnuts and drizzled with honey (or with Caramel yoghurt).


Cherry Muffins
Use fresh or canned cherries in these tasty muffins.

INGREDIENTS:
1/2 teaspoon salt
1 tablespoon baking powder
2 cups all-purpose flour
1/4 cup sugar
1 cup pitted fresh cherries or canned cherries, drained
1 egg
3/4 cup milk
1/4 cup melted butter
PREPARATION:
Directions for cherry muffins
Sift together the flour, salt, baking powder and sugar; add cherries and stir gently to blend. In a separate bowl, beat egg until thick and light in color; stir in the milk and melted butter.
Quickly stir egg and milk mixture into the dry mixture. Butter and flour 12 muffin cups. Pour batter into prepared muffin tins. Bake cherry muffins at 375° for 25 to 30 minutes. Makes 12 cherry muffins.

Also, strawberries dipped into melted milk chocolate are delicious.

Get some lovely fruity ice cream in different flavours and pile different flavours on top of each other in tall sundae glasses and finish off with a chocolate flake.

If you're a fruit lover, why not try out some exotic fruits there? Tropical fruits are nice, though it may be a little costly, like pineapples, bananas, papaya, etc.

P/S: Do take note of durian, the thorny green fruit. It smells foul to some people, so some may get offended by the fruit. Actually it taste good! :P

Also, those colourful fruits will make the photo looks better at some point. :D

A custard fruit tart is lovely looking and tasting. And it has some health to it. Also, hot apple pie with butter pecan ice cream is good, with a decorative caramel sauce garnish. Brownie ala-modes with hot fudge would be decadent and sinful. You could make/buy a few different things and have a dessert sampler buffet. An ice cream cake is always loved. Also, pudding cake ( make a normal cake. Make instant pudding. Put
1/4 cup less milk in pudding than normal, and once the cake is cool you layer the pudding in between layers. Delicious. Yellow cake with butterscotch pudding. Chocolate pudding with white cake. Vanilla pudding with chocolate cake. Also, parfaits in clear glasses look great. Parfait ideas- layer in about inch segments in clear tall glass- cookie crumbles, cake crumbles, crumbled brownies, ice cream, frozen yogurt, pudding, candies, caramel sauce, hot fudge, strawberries. Also, chocolate cake crumbled up with gummi worms looks fabulous and is especially good for little kids. When you go to do the candle thing stick a few candles in each parfait and put them all together in center of table, sing the song, make a wish, blow em out, then each person grabs their parfait. If there's a Coldstone Creamery near you get one of their ice cream cakes....o m g they r sooo good. I like the idea of pizza. Also different kinds of munchies.
