I need to make a salad for a tennis party tonight. Any quick and easy suggestions?!

You Have to try this one....if not tonight at least sometime....


Broccoli Salad


1 head fresh Broccoli cut in small bite size pieces
1/2 cup raisins
1 3.75 oz small bag salted sesame seeds ( reserve a little)
1 pack bacon cooked and crumbled
1 cup red or green seedless grapes halved
1 med chopped red onion


Dressing:

1 Cup Mayonnaise
3 T. Apple cider Vinegar
1/4 cup sugar


combine onion, grapes, broccoli, bacon, and remaining salad ingredients. In a separate bowl, combine the dressing. Combine dressing and salad in large bowl and mix well..Top with reserved sesame seeds and Chill at least 2 hours. This salad is GR8 room temp or cold
it WILL NOT WILT!

Caesar

German potato salad: hot or cold it last.
Potatoes sliced
vinegar to taste
onions
bacon (reserve grease)
celery (opt)
sugar by the tsp.
Cook alll except vinegar.
when all are cooked but still have an al-den-ta (to the tooth) bite to them remove from heat add vinegar,bacon drippings about 2 Tbs. and sugar. You will want a sweet but tangy flavor . Salt and Pepper to taste.
Great as a Hot side dish or room temp for a salad.

Four Bean Salad
1 16-ounce can green beans
1 16-ounce can yellow beans
1 16-ounce can red kidney beans
1 16-ounce can garbanzo beans (chick peas)
1 green bell pepper, chopped
1 medium onion, chopped
2 stalks celery, chopped
DRESSING

3/4 cup sugar
2/3 cup cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup vegetable oil
Drain beans; mix together with vegetables. Thoroughly blend together the dressing ingredients. Pour dressing over beans and toss. Refrigerate overnight. (Can be prepared 2-3 days ahead.)
