Saturday Brunch Menu Ideas?!


Question: I have just two friends coming over next Saturday, and they'll be helping me sort through a bunch old stuff I've been planning on donating. I told them I'd like to make them lunch/brunch for helping me out but haven't got a clue what to make.

you can make bagels and lox, coffee, small hors deourves, as an appeitezer/salad you can make a lobster salad:
3/4 pound fresh cooked lobster meat, small-diced
1/2 cup good mayonnaise
1/2 cup small-diced celery (1 stalk)
1 tablespoon capers, drained
1 1/2 tablespoons minced fresh dill
Pinch kosher salt
Pinch freshly ground black pepper
4 heads Belgian endive

Combine the lobster, mayonnaise, celery, capers, dill, salt, and pepper. With a sharp knife, cut off the base of the endive and separate the leaves. Use a teaspoon to fill the end of each endive leaf with lobster salad. Arrange on a platter and serve.
for the main course:
goat cheese tart
1 1/2 cups all-purpose flour, plus more for dusting the board
Kosher salt
13 tablespoons cold unsalted butter, divided
3 to 4 tablespoons ice water
3/4 cup chopped shallots (3 to 4 shallots)
10 1/2 ounces garlic-and-herb soft goat cheese (recommended: Montrachet}
1 cup heavy cream
3 extra-large eggs
1/4 cup chopped basil leaves
1/8 teaspoon freshly ground black pepper

Preheat the oven to 350 degrees F.
For the crust, put the flour and 1/4 teaspoon salt in the bowl of a food processor fitted with the steel blade. Cut 12 tablespoons (1 1/2 sticks) of the butter into large dice, add to the bowl, and pulse until the butter is the size of peas. With the machine running, add the ice water all at once and process until the dough becomes crumbly. Don't overprocess. Dump the dough out on a floured board, gather it loosely into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
Roll the dough on a well-floured board and fit it into a 9-inch tart pan with a removable sides, rolling the pin over the top to cut off the excess dough. Butter 1 side of a square of aluminum foil and fit it, butter side down, into the tart pan. Fill the foil with rice or beans. Bake for 20 minutes. Remove the beans and foil from the tart shell, prick the bottom all over with a fork, and bake for another 10 minutes.
Meanwhile, heat the remaining tablespoon of butter in a small pan and saute the shallots over low heat for 5 minutes, or until tender. Place the goat cheese in the bowl of the food processor and process until crumbly. Add the cream, eggs, basil, 1/4 teaspoon salt, and the pepper and process until blended.
Scatter the cooked shallots over the bottom of the tart shell. Pour the goat cheese mixture over the shallots to fill the shell (if the shell has shrunk, there may be leftover filling). Bake for 30 to 40 minutes, until the tart is firm when shaken and the top is lightly browned. Allow to cool for 10 minutes and serve hot or at room temperature.

Make a bread pudding, have fresh fruit, and for the non vegetarians, sausage, but with the pudding and fruit you would not even need it...

Good strong hot coffee and orange juice, and you ahve a great meal!


7 or 8 slices of white bread--into 3/4" pieces
3 cups hot milk
2 beaten eggs
2/3 cup sugar
1/4 tsp salt
1 tbs butter
1 1/2 tbs vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg [+ sprinkle over top when in pan]
1/4 tsp baking powder

Coat 8" X 12" casserole dish with butter. Pull bread into 3/4 " pieces & put aside. Combine remaining ingredients and mix well. Add the bread and mix well.
Add to casserole dish and sprinkle with nutmeg.

Bake in 350°F oven for 45 minutes.

sautee onions and green pepper in a skillet with a little oil when its heated add eggs salt and pepper and scramble them.

while the onions and green pepper are heating make beer biscuits like this:

4 cups Bisquick
1/3 cup sugar
12 ounces beer

Combine in mixing bowl and mix until smooth.
Spoon into very well greased muffin tins and bake at 450 for 10-15 minutes.

i baked mine at 400 for 12 minutes in an older oven. serve that with honey butter or just honey. its very good.

serve mimosas with this- champagne and orange juice in a cute glass. yum.

Make Ahead French Toast

INGREDIENTS
* 5 eggs, lightly beaten
* 1 1/2 cups milk
* 1 cup half-and-half cream
* 1 teaspoon vanilla extract
* 1/2 (1 pound) loaf French bread, cut diagonally in 1 inch slices
* 1/2 cup butter, melted
* 1 cup light brown sugar
* 2 tablespoons maple syrup
* 1 cup chopped pecans

DIRECTIONS
1. In a large bowl, whisk together eggs, milk, cream and vanilla. Dip bread slices into egg mixture and place in a lightly greased 9x13 inch baking pan. Refrigerate overnight.
2. The next morning: Preheat oven to 350 degrees F (175 degrees C).
3. In a small bowl, combine butter, sugar, maple syrup and pecans. Spoon mixture over bread.
4. Bake in preheated oven until golden, about 40 minutes. Let stand 5 minutes before serving.
