We are planning a self-catered wedding reception for over 200 people?!


Question: Any suggestions, links, etc. would be greatly appreciated. I'm afraid of getting too overwhelmed!
The wedding will be in mid-September.

Our projected menu is:
Roast pork
Beef or chicken
Green beans
Corn
Cold pasta salad
Cake and cookies, with a marshmallow roast over a bonfire.

The hall we are using has a large oven, and alot of freezer and refrigerator space.
We are also going to grow the corn and green beans on our farm, and raise the pigs ourselves.

I too am planning to do the same thing you are.
I would just suggest having dishes that are easy to prepare or that can be made waaaayyyy ahead of time, frozen and then made that day or day before. I am fortunate enough to have a number of people who will be able to take care of the food THE day...But we ourselves are going to be making it ourselves....
maybe anohter dish you could add is a fruit salad and dinner rolls possibly. Or heck you could even offer salad...just do the basic lettuce and then offer some olives, tomatoes, cucs, etc...you can save loads on it if you plant the veggies yourselves...
As for the cake...not sure if you are doing it yourself or not...but I am doing ours and I personally thought it would be easiest for me (and my helpers) if I did a "cupcake cake"....they could be baked way in advanced, frozen, then the week OF, brought to room temp, frosted, easily decorated with Royal Icing flowers that I make in mass quantities, and then just left in boxes in a cool place till the DAY OF...where my helpers can just set them on stacked cake plates with pillars...
I think all the dishes you are offering as simple enough that you can pull it off....just try to get as much done in advance so that the day of the wedding all other peope have to do is set it all up for you...
can't help ya on any links...i too have tried researching it all and the best thing i have found is recipes for stuff i can make in mass quantities

Yikes. Take it from me, on your big day, you want to hand that resposibility over to someone else. If anything, help with planning and prepwork BEFORE the actual event, but not the day itself. You will be too overwhelmed to enjoy yourself or any of your guests.
