I am in a cooking/baking kind of mood what should I make for this Party?!


Question: My son's second birthday is tomorrow and I am in the mood to cook and bake a bit. I am making some really good chicken kind of pizza, pigs in a blanket, and some punch. What else do you suggest. There are only going to be a few kiddo's here (maybe three) and we ordered his cake and I am baking a small batch of cupcakes for the kiddies. It's mostly addults and people are trying to keep resolutions.

Sugar Pie's Artichoke Tapenade

1 (14 oz) can quartered artichoke hearts, drained
1 (8 oz) jar marinated artichoke hearts, drained
2 Tbsp. fresh parsley, rough-chopped
2 Tbsp. EVOO
1 Tbsp. canola oil, or mild salad oil
1/3 cup. freshly grated Parmesan cheese
1 Tbsp. lemon juice
1/4 tsp. granulated garlic
1/2 tsp. kosher salt, to taste
few grinds black pepper, to taste

Sort through artichoke quarters, removing any tough outer leaves. Place all ingredients in food processor, and pluse until a coarse paste is formed. Adjust salt and pepper as desired. Yield: 1? cups.

Serving Suggestion: Place thin slices of baguette or sourdough bread on baking sheet, and drizzle with EVOO. Toast in 375oF oven 4-5 minutes. Remove, and spread with artichoke tapenade. Sprinkle with freshly grated parmesan cheese, and return to oven for another 5 minutes. Top w/ FGBP and serve. Good hot or at room temp.

Also good tossed w/ hot pasta, fresh diced roma tomatoes, and grilled chicken breast.

Classic Olive Tapenade

1 (16 oz) jar pittred calamata olives, drained
1 Tbsp. drained capers
1 Tbsp. sherry vinegar or white wine vinegar
1 tsp. lemon juice
1 garlic clove, crushed
1/4 tsp. fresh ground pepper
1 tsp. rum (optional)
3 Tbsp. EVOO

Pulse first 6 ingredients, and rum if desired, in food processor 3 or 4 times.
Gradually add oil and pulse another 3 or 4 times until mix forms coarse paste.

Spinach Parmesan Balls

1 pound package frozen chopped spinach, thawed and excess water squeezed out
5 eggs
1 large onion, minced
10 tablespoons margarine, melted
1 cup shredded Parmesan
2 garlic cloves, minced
1/2 teaspoon dried thyme leaves
1/2 teaspoon cayenne
1 3/4 cups Italian-style bread crumbs
Preheat the oven to 350 degrees F.

Place spinach in a large mixing bowl. Add the remaining ingredients and mix well by hand.* Form the mixture into 1-inch balls, either by hand or with a small ice cream scoop. Place the balls closely together on a baking sheet.

Cook in the top half of the oven until firm to the touch, about 20 to 25 minutes. Let cool 5 minutes, and then transfer to a platter and serve immediately.

* Cook's Note: Wearing latex gloves while mixing and forming the balls is suggested.

I would choose some sort of sweetbread muffins, like pumpkin bread or banananut or zuchinni! Sweet, but still seems nutritious! :)

Well, you could make some nice rolls, like turkey, salad + cranberry sauce for the adults. A nice plain spinach salad with french dressing, french onions + baby tomatoes. Crackers with cheese, and for the kids you could make toffee ill c + p the recipe.
