It is a chafeing dish, or buffet server. You can either use gas sternos, tea lights or have an electric one. I recently just bought a 3 compartment electric one and really like it. Comes in really handy for parties.

It is a chafing dish. The heat source is a "sterno".
You will want to purchase a 4-6 hour sterno (better deal). 1 time use chafers are also a better deal for low usage. If you will be catering often, a metal chafer is expensive but obviously a necessary investment.
