You should set an RSVP date - otherwise most people these days will simply not RSVP and will then show up at the last minute.

If you are having your event catered, then you need to find out from your caterer what the last day is that you have to tell her how many people she will be serving. Set your RSVP by date for two or three days before that day. Some people RSVP late and you might want to give those who don't bother a call. Otherwise you will have "last minute guests" who expect food with none prepared for them.

If you are doing your own catering, then allow at least one week between your last RSVP date and the date of your party.

i do 3 to 5 days. that gives me enuff time to complete shopping and preparing for the party. at that time u'll know exactly how much u need.

I give myself a week for a party at home. If it's at a venue and they need a head count then go with what ever date they need the number by.
