If you mean the color in fresh cherries, that is their natural color. If you are talking about the very red color of maraschino cherries, that is produced by adding food coloring during production. You will also find food coloring added to some canned cherry pie filling. Canned cherries lose much of their deep red color and can be a rather unattractive brownish-pink.

There are also green cherries that you can buy in the ice cream topping aisle of your grocer.
