- Chipped beef, mix with cream cheese and serve as a dip for crackers
- Take melba toast (small cracker size) and spread with garlic cheese spread add a thin slice of tomato and top with chopped basil
- cook a couple of store pizza's, adding additional toppings to them, then cut into social serving size rather than the large sizes

Have fun.

Just made a good recipe to use for a dip. Melt two packs of cream cheese, 1 1/2 cups pf shredded cheese, 1/2 cup of hot buffalo sauce (franks is good) and 3 cans of chicken (like the cans that tuna comes in), and 1 cup of either Ranch or Blue Cheese dressing. Its very yummy and different:) Serve with nacho chips

Fresh Veggie Pizza

2 packages crescent rolls
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
1-1 1/2 cups broccoli florets
1cup cauliflower florets
2 thinly sliced green onions (optional)
1 c. shredded mozzarella
11 oz. cream cheese ;1 8oz pkg and 1 3oz or 2 8oz you do the math :)
2 Tbls dill
2 Tbls milk

Roll crescent rolls onto lighly greased cookie sheet. Be sure to press the pieces of dough together. I find it easier to leave them side by side and then flatten them out on the cookie sheet as needed. Bake according to package directions. Completely cool before putting on cream cheese mixture. In medium sized bowl mix softened cream cheese, dill and milk. Spread on pizza crust once it's completely cooled. Chop veggies and sprinkle over pizza, top with green onions and cheese. Lightly press down on toppings. Cover with plastic wrap and refrigerate at least 2 hours before serving.

*** You can add/omit whatever veggies you like.

Ground Beef Dip

2Lbs. lean ground beef
1c. chopped onion
1 jalapeno seeded and chopped (optional but it doesn't make it too spicy if you remove the seeds)
2 cloves garlic, minced
2 cans (8-oz ea) tomato sauce
1/2c ketchup
1tsp oregano
16 ounces cream cheese
1/2c grated parmesan
1 1/2tsp chili poweder

Brown beef, onion and jalapeno until beef is cooked through. Drain fat and put into crockpot. Add the rest of the ingredients. Cook on low for 2 hours or until cream cheese is thoroughly blended. Stir, taste, and adjust seasoning if desired. Serve with tortilla chips!

I also like making sandwiches on a large french bread. I hollow out the center (remove the soft bread part), brush with olive oil and brown in oven. I grill or fry a couple chicken breasts with garlic and fresh rosemary in olive oil and then cut them into diagonal strips once they've cooled. Portabella mushrooms are then broiled with olive oil, salt and pepper and *fresh mozzarella is cut into thin slices and lightly salted. In a small sauce pan I reduce about 1 1/2 cups of basalmic vinegar (really sweet) until it is syrupy and coats the back of a spoon. Sometimes I fry red peppers and onions too for it. On the bottom layer of bread I lay the chicken, next goes the mushrooms and then the fresh mozzarella. At this point you can put it under the broiler to lightly brown the cheese or leave it as is. If I feel like them, the onions and peppers go on next along with a spooning of basalmic vinegar. I also serve the vinegar on the side. The french bread sandwiches can be cut into whatever size pieces you want. You can also use an Italian loaf or whatever bread you prefer. Try this with cold cuts, or whatever types of sandwhiches sound good to you!
