8 ounces semisweet chocolate chips
1 stick butter
1/2 teaspoon vanilla extract
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon salt
4 eggs
Butter, to coat muffin tin
1 tablespoon cocoa powder
1 cup vanilla ice cream
1 teaspoon espresso powder

Preheat the oven to 375 degrees F.
Place a small metal bowl over a saucepan with simmering water. Melt the chocolate and butter in the bowl. Stir in vanilla.

In a large mixing bowl, combine sugar, flour and salt. Sift these into the chocolate and mix well with electric hand mixer. Add eggs one at time, fully incorporating each egg before adding the next. Beat at high until batter is creamy and lightens in color, approximately 4 minutes. Chill mixture.

Coat the top and each cup of the muffin tin with butter. Dust with the cocoa powder and shake out excess. Spoon mixture into pan using a 4-ounce scoop or ladle. Bake for 10 to 11 minutes. Outsides should be cake-like and centers should be gooey.

While muffins are in oven, melt the ice cream in a small saucepan. Stir in the espresso powder. Serve over warm muffins.

1 rice cake and a glass of water. maybe a lentil or two.... wouldn't want to over do it. always play it safe ... always play it safe

I don't like crab and I don't like any type of steak, and I know several people (male and female) who are the same, so you might want to be sure of what your date/boyfriend/husband TRULY likes, before you prepare it or buy it. :) Sometimes the things that are expensive, fancy and gourmet are not necessarily liked by everyone.

Whatever is his favorite meal or something that you do not make very often...or splurge and get lobster or jumbo shrimp!

I usually go the seafood route for V'day!
Shrimp Scampi or Salmon with raspberry vinaigrette...Sea Bass with a creamy dill sauce and sun dried tomatoes, or even Veal Parmigiana. (I am an excellent cook and make a from scratch everyday for my family! Yes I do work full time and I do plan ahead. Really, everyday is a treat here!)

Eat foods that are considered Aphrodisiacs... it will put both of you in a romantic mood... remember a nice setting doesn't only make a good date but a complete ambiance change.... taste, smell, looks, touch, hearing....

lobster chatee with red pepper couli served on a bed of rice salad pilaf and a side angel hair pomadora, seducted with a white sparkling pino noir

steam prawn with fresh ginger and noodles.
fresh fruit (strawberry) as dessert.
white wine + red roses

very simple... go with the fanciest dish. that ought to whoo her. And skip the played out meal. Filet Mignion is so played out and so cliche... That's like the 1st thing it pops into everybody's mind. Go with somthing unconvetional, mabey some lamb or salmon, or some fancy dish like warm rock shrip and celery root salad or Boeuf Bourgignon. Try to wow her off her feet, it is valentine's day and it happens once a year. You can also take her out for Fugu, just get recomendations before you try it out. I heard it is an Asian Delicacy and very delicious, but it has to be prepared right, or it is deadly.

any type of surf and turf is always good but i am corny and like anything heart shaped for v-day like a meatloaf, pizza, etc.

A good side could be Vodka Penne--- I did a whole Valentines dinner by candlelight a few years ago... Vodka Penne, Toasted garlic bread, salad with homemade creamy italian dressing, and chocolate zabalognie (sorry I KNOW that is misspelled)... I think It was Rachel Ray's "You Won't be Single for LOng Vodka Penne" courtesy of Foodnetwork.com..... it is VERY delicious, and tastes and looks like it took alot of effort, but its quite easy to make....

Take the king crab legs and force them in the shape of a heart and tie them with string or something. Or shape the filet mignon. Have heart shaped muffins with some cinnamon hearts on top. Maybe have some little of those heart candies strewn about the table. Kind of festive don't cha' think. :)

i would definatly make a platter for you both to share for main meal? you could have a fish platter of battered squid, scampi, stuffed clams and so on or a meat platter that can consist of breaded chicken, sticky bbq chicken wings, meatballs and chicken or beef skewers? or mabe have a bit of both? it's really romantic to share food?

if your having starter you could have stuffed cheese garlic mushrooms or onion rings with dips (bbq, blue cheese, ketchup, mayo).

ir you having afters i would have strawberries and cream or f you want to share again have a fondue set with dipping stuff like strawberries, marshmallows, profitaroles?
and rose champagne is a must have?
