Quiche Lorraine help- cheeses, wines, and sides.?!


Question: I am making Quiche Lorraine tommorow for a guest at his request. Can i mix swiss, and gruyere in this dish
halving each portion of course.

Im also having trouble deciding on what to serve with this dish. I was thinking fresh steamed vegg. (broccoli cauliflower carrots) any suggestions would be greatly apprieciated as this is my bf's boss. He was talking about bringing wine...does wine even go with quiche, and if so what wine should I buy to have WITH the meal ?

Im also doing this on a moderate budget. It's an informal dinner / get together because they seem to enjoy hanging out.

Yes on the swiss and gruyere. I like a fresh, green salad with quiche. Regarding wine, a crisp, white that is a little fruity...try a chardonnay or a liebfraumilch. Either is inexpensive and good. If the boss brings a wine, use it for before dinner drinks to show your appreciation.

A good dessert would be a fresh fruit trifle with spiked whipped cream (add a little of your favorite liqueur to the whipped cream...I like Courvousier.).

I would go with a nice salad, with spinach. Something fresh is always better. How about skinny bread stix, made with garlic.?
