OK, so I'm having 2 girlfriends over this Friday night for a movie night. Need some economical dinner ideas!

Ingredients:
1 small container of cherry tomatoes
10 cloves garlic.
some feta cheese, perhaps 100g
basil leaves - as much as you like.
salt and pepper.
olive oil.
250 g pasta
Instructions
Drizzle some olive oil onto a roasting tray. Chop the cherry TOMATOES in half and place on the roasting tray.
Place the whole garlic cloves on the roasting tray.
Season tomatoes/garlic with salt and pepper.
Roast tomatoes/garlic in the oven on a fairly high heat for about 20 mins.
Meanwhile wash your basil leaves and chop your feta cheese and cook your pasta.
When tomatoes/garlic roasted (garlic should be soft now) - take out of oven and carefully remove skin from garlic.
Chop roasted garlic.
Drain pasta gently stir through roasted toms, garlic, feta cheese and basil. (remember to add the juices from the roasting pan also)
Season with salt and pepper and some more olive oil if you like.
EAT!

just order pizza.. then youll just make something for dessert.. pasta of some sort is easy too....

Pizza is the go - but make it a bit different by using ricotta cheese instead of chedder and oven dried vegetables such as pumpkin and tomatos. Then throw some chopped basil over the top.

Tacos, then they could have taco salad, hard shell or soft shell, and you could have beef and chicken. The effort is minimal, and you set it all out buffet style, and they assemble their own.

Make a big bowl of Mac & cheese.. but add some diced tomatoes, shredded mozarella, maybe some smoked paprika.. and of course some sort of meat on the side. Like those SUPER easy tyson chicken strips. (they have no trans fat) and dont forget the wine!

Spaghetti and meatballs. This is my comfort food of choice. It is inexpensive and hearty. Serve with a loaf of good bread and a salad.

Pita Pizza's everyone can add there own toppings and they toast in 10 minutes.

This dish is incredible. Use the curry paste to taste to make it mild or spicy.

Thai Chicken

Ingredients
1 tablespoon olive oil
1 medium onion, thinly sliced
1 3/4 teaspoons Thai green or red curry paste*
1 14-ounce can unsweetened coconut milk* whisked to blend
1 tablespoon (packed) brown sugar
2 teaspoons fish sauce (such as nam pla or nuoc nam)*
1 pound skinless boneless chicken breast halves, cut into thin strips
1 large red bell pepper, cut into strips
2 tablespoons fresh lime juice plus wedges for garnish

Preparation
Bring 1/4 cup coconut milk and curry paste to boil in large skillet over medium-high heat, whisking constantly. Add bell pepper and onion; sauté’ 5 minutes. Stir in chicken, remaining coconut milk, sugar and fish sauce. Cook until chicken is cooked through, stirring often, about 5 minutes. Stir in remaining 3 ingredients and simmer 1 minute. Season to taste with salt and pepper.
