Should I pre cook foods for a large event??!


Question: I have a wedding coming up this summer and we plan to to it on our own. For the recption we want to do a BBQ but we are afraid that the food will take to long to cook. We will have about 200 people to serve. Should I pre cook all the meats then just warm them on the grill?? Please Help

No you can't cook that much in one day unless you have a professional size grill. It's yourr wedding day for pete sakes. You need HELP and lots of it. Now when I catered I did cook my brisket and ribs the day before. The secret was cook in a slow oven about 250 and in a heavy pot with a tight fitting lid. Meat cooked 6-8 hours. I even added the B'Q sauce mixed with liquid smoke for 1-2 more hours without the lid, turning up the heat to 350. When cooled some what wrap in foil, refrigerate. Warm in a slow oven or on a grill. I served a potato casserole and those can be prepared the day before but no need to bake untill 1 1/2 before serving. No one knew I didn't slave over a grill for all this. That is a lot of people so get so help.A big salad is easy Baked beans go well and cole slaw would do. All can be prepared well ahead of time.Congratulations ......and get some help please.

That would be ok just make sure you will have enough space in your fridge to store the food.

yes and make sure that when youi reheat them that it is coverd and/ or not heated till it burns cooking before an even up to days before is a very smart thing to do

You don't want to completely cook the meat, it will dry out really bad if you cook it and then warm it up. Maybe you could get someone cooking early in the day and put the meat in warming trays with lots of sauce over it. Then you serve it out of the warming trays, that's what caterers do.

yes you cannot cook for 200 hundred people on a grill.hire a caterer

Yes. Pre cook the meat and onion but only half. Don't cook it all the way through other wise when it is served it will be all dry and yuk

Well it does depend on what you are serving, If it is chicken... BE CAREFUL... It is likely to dry out if you recook it.

But I say NO!!! Hire a caterer... It is the one day of your life that is suppose to be the BEST. You don't want the stress of having to make sure the people are fed. If you live in Arizona there is a really good caterer in Phoenix!! On 43th Ave and Cactus, on the south west corner. It is called Sweet Unlimited. They do pastries and wedding cakes and CATERING!! Make some nice meat dishes that can be reheated in the MW, and put out as help yourself dishes like a smorgasbord.

Years ago I had to make a dish for such an event.
I stewed for hours a good curried beef, and boiled up a heap of mince and froze.

It was one of the most popular dishes and was first to be finished, and people wanted more.

Don't put all of your eggs into the one basket.

Line up a a row or two of simple but nice sandwiches, and mix them up.
Tomato, egg, cucumber, grated cheese, ham and mustard etc. Multi layer fingers, rolls and swirls.

Rope in you friends to help,"Bring A Dish" these are thee people closest to you, and not the other guests.

Quite an undertaking. Did this once, everything but the meat, I had that catered. I think you should too if you want to enjoy the party too. Assigning duties for people ahead of time helps, my man was in charge of ice, beer, & pop. My daughter set up the childs hard plastic swim pool, salads ontop the ice, she also added flowers inbetween the bowls. My neice did the punch bowl with the ice scupture. Good luck.

make the salads, soups, side items one or two days in advance, that's fine. If you are grilling veggies they have to be fresh, but do all the cutting in advance.

If depends on the BBQ food. Chicken gets dry if cooked twice, If you are doing ribs, or sausage, or something like that, pre-cook, and then warm on the grill.
