I need one more idea for an hors d'oeuvre at a luncheon cocktail I am hosting.?!


Question: I am getting married in my home and it is just family coming--several from out of town. So I wanted to have a chance for everyone to get together and mingle/visit since it's been a while since we've all been together. I am having a luncheon cocktail hour for visiting, etc...before the ceremony. I am having shrimp cocktail, mini quiches, cherry tomatoes stuffed with pesto and topped with freshly grated parmesan cheese, cheese and cracker platter, fruit platter (maybe veggies too), and maybe broiled crab-stuffed mushroom caps. I need ONE more appetizer--like a fancy finger sandwhich or pinwheel sandwhich. Mind you--I am prepping this stuff myself (with mom's help) the day before--except the stuff that goes in the oven obviously. I've perused hors d'oeuvre/appetizer books and recipe websites. I'm just not finding that last one that jumps out at me and sounds great with maybe a little sophistication. (Nothing in a sauce--too messy.)

mix roasted peppers and cream cheese, pipe onto small slices of bread, or even cuke slices

Cucumber/Turkey Sandwiches are good...
I make them by taking a baguette, toasting it, open, with a dab of olive oil and parmesan..spread with cream cheese...
slice into whatever sizes you need..then pop a couple of thinly sliced pieces of English (seedless) cucumber and smoked turkey....YUM! (EDIT: You can also add a little slice of Swiss cheese...even yummier!)
Tastes like you spent all day on them...great with drinks, other appetizers, and for "weight" watching guests...

Sounds fantastic. How about something threaded on bamboo skewers? You could stick the skewers in a pineapple or cabbage for presentation on the buffet table. As for what to skew-marinated chicken or beef pieces that have been marinated and grilled or broiled on the skewer ahead and then microwaved to heat before serving. You could make skewers with sushi grade tuna, but would have to cook those right before serving.

Try bruschetta or smoked gouda wrapped in prosciutto ham which can be served on any type of bread or cracker. They are both incredibly easy to make.

Get some puff pastry and roll out into a large rectangle shape, have the short sides of the ractangle facing you. Get some pesto (red is nice but any works well) and spread all over the rectangle. Top this with slices of parma ham, then cover with a little grated cheese (parmesan is nice). Then roll the left side of the rectangle (should be one of the longer sides) like a swiss roll into the middle of the rectangle pastry, do the same with the right side as well. Then cut slices from this about half a centimetre thick and back at 200degrees til goldne brown. I think these are called Palmiers, I found a recipe for sweet ones so you could see a picture of the end result! They taste great, you can add all sorts of different fillings.

Chicken Quesadilla Pinwheels
4 large flour tortillas
2 cups shredded Monterey Jack
1 cup chipotle salsa
2 cups chopped store rotisserie chicken meat, shredded

Heat a large skillet over medium heat. Add a flour tortilla and blister it on one side, then turn it over. Scatter cheese on top and cook one minute.
Remove to cutting board. Top the tortilla with 1/4 cup salsa, spreading it gently with the back of a spoon to the edges. Top with 1/2 cup chicken, then roll tortilla into a log. Let stand a minute before cutting. Repeat with remaining ingredients to make a total of four tortilla logs. Cut pinwheels into 1/2-inch slices and arrange on platter.

I just came from a good friends wedding on Saturday. It was at the family residence of the husband-to-be. His mother and sisters did lots of preparing also but for the crackers and cheese platters bought them from a store.

There were three other items beside those that you mentioned there that was being replenished CONSTANTLY:
barbecue chicken (drumsticks/wings), meatballs, and FRUIT.

I didn't see any fruit mentioned there in your list (except the tomatoes of course).. maybe fruit salad?
There was a selection of freshly sliced fruits... canteloupe, strawberries, watermelon, grapes, melon... you can spice it up anyway you'd like and not serve the regular fruit like those but instead put something a little more tropical or something that is dipped..
blood oranges or something like that. tasty, healthy, and look excellent fanned out on a tray. Forks or toothpicks make it mess free also.

I don't know that I agree with the sandwiches though because with as much other hor d'oeuvres you have, i'm assuming that dinner is to follow... they won't be hungry after...

that is what happened at this wedding... there was so many offerings (that were very tasty) before dinner that many people filled up on those, and then there was an overabundance of extra dinner food and no take-home containers. the mother said may have gone to waste because she didn't know what to do with it all.

anyway hopefully you find something awesome.
aside from the cheese and cracker platter you could have a sliced baguette platter. or make a sandwich out of the baguette and cut it into slices pinned closed with a toothpick with the frill on top. those are always good too and relatively simple to make, mess free for the guests, and aren't TOO filling unless someone takes way more than they oughta.

[edit: i was thinking a quesadilla would be nice but those are usually better tasting when fresh, but also end up a bit messy with cheese oil dripping. shredded chicken (so its not too lumpy and you end up with chicken chunks all over the floor) and a small mixture of cheeses would be nice. that can be sliced creatively also and presents lovely on a tray too.]

Sounds yummy and pretty too.

Here are 3 both easy and can be made ahead.

Use small, square or rectangular dinner rolls and slice open. Spread with a mixture of soft butter, mustard and poppy seeds. Use deli ham topped with a slice of swiss cheese, cut into small strips the size of the rolls.

Take wraps (can use spinach for a nice color). Spread with herb or vegetable/garlic cream cheese. Add thin strips of roasted red pepper, some leafy lettuce, and slices of turkey. Roll tightly, slice into pinwhels.

Or use the sausage ball recipe from Bisquick. Off hand if I remember, brown 1 lb ground sausage and drain. Add to 2 cups Bisquick, and 1 cup grated very sharp cheddar (I always use Cracker Barrel coons brand) Roll into balls and bake at 350 until lightly brown.

Congratulations on your up coming wedding! Here are some ideas for that elusive appetizer you're looking for:

1. Skewers of pineapple, mango, and chunked Smythfield Ham.
2. Bacon Cream Cheese Pinwheels: 1 can Pillsbury Crescent Rolls, 1 package cream cheese, 3 T sour cream, 1/3 package Knorr Vege Soup Mix, 3 T chopped green onion, 5 slices platter bacon, chopped. Mix cream cheese with sour cream and soup mix. Add green onion and set aside. Saute bacon until cooked thru and drain. Cool and add to cream cheese mixture. Remove roll dough from package and seal edges to form a large rectangle. Spread cream cheese mixture on dough and roll up jelly roll style. Score in 8 - 10 places and put on greased cookie sheet. Bake at 350 degrees until golden. Remove and cool slightly and slice in scored places. This recipe never fails to please and can be doubled or tripled easily.
3. Hot Artichoke and Crab Dip: 2 cans artichoke hearts, drained and chopped; 1 can diced green chili's; 1 cup crab meat; 1 cup mayonaise; 1 tsp hot sauce; 1 tsp lemon juice; 1 bunch chopped green onion, green parts only; 2 cups shredded parmesan cheese. Mix the above together and place in baking dish. Bake until bubbling and slightly golden browned. Serve with blue corn tortilla chips or your favorite artisan crackers. A real crowd pleaser!
4. Lil smokies in puff pastry: Using puff pastry or crescent roll dough, wrap each smokie with a piece of dough and bake in a 350 degree oven until puffed and golden. Serve with spicy mustard or barbecue sauce.
5. Mini meatballs in marinara in a sourdough bread bowl: make your own or purchase premade meatballs and sauce. Hollow out a sourdough loaf to make a bread bowl and fill. Top with parmesan and bake until cheese melts. Serve with additional sauce and french bread.
6. Peppered salami rollups: Spread slices of peppered salami with cream cheese and roll around a cornichon. Secure with toothpicks.
7. Curried deviled eggs: 12 eggs boiled, cooled and peeled. Cut in half and place yolks in bowl. Add mayonaise (not so much as to make it soupy), sweet relish and curry powder to taste. I usually don't add salt, but season according to your desire. Blend until smooth and fairly creamy. Place in pastry bag and using a large star tip, fill each hollowed egg white shell.
8. Cucumber with smoked salmon: Score large English cucumbers and slice into 1/4 in slices. Top with a dollop of creme fraiche and a slice of smoked salmon. Top with a sprig of dill.
