We want to serve salmon at our wedding, any suggestions on sides?!

Question: It's going to be in August, in a Native American building/setting, with 1 Norwegian wedding cake and 1 American wedding cake, and a "sunset on the beach" theme. FH's mom is going to make Jello salad and we are having "sunset punch" lol... any ideas on inexpensive sides to go with fire cooked salmon? :)

fire roasted veggies. squash, broccoli, celery and onions. you can steam them ahead of time.
then roast them or packet cook them with a lil evoo and herbs

you can have a creamy pea salad and a light pasta salad tossed with a creamy italian dressing (i like the ones with small cheese cubes, cherry tomatos and black olives)

i have lots of recipes. email me and i'll send you some

Asparagus in hollandaize sause.

Asparagus would go really well. There are tons of sauces and glazes that would make it perfect.

Garlic buttered broccoli, grilled asparagus, or grilled garlic and herb brussel sprouts.

A Waldorf salad, made with apples and nuts, a pate' (sp?), a sorbet of your choice after the first course, maybe a fresh fruit cup for a light dessert before cake. Best wishes on your wedding. Oh, and your favorite wild rice with some pea pods with the salmon.

in addition to the asparagus or other green veggie, what about some rice or cous cous? Some starch would be good and not very expensive (and it would be filling for the guests, but not too heavy or greasy).

I'd go easy on garlic sauces on veggies, some people have trouble eating garlic (stomach issues).

Have some wheat rolls, they're tasty. Congrats.

baked potatoes, grilled tomatoes, zucchini and peppers drizzle with virgin olive oil.

Roasted veggies and rice cooked in chicken stock, right before you serve it mix in some pine nuts and sliced scallions.
