I'm making Taco Salad?!


Question: Well actually its haystacks but pretty much the same thing. I am making dinner for my husband and his parents. I really want to do a tasty side dish that doesn't take too long. I still have plenty of time to run to the store.. What goes good with Taco Salad with all the fixins?

How about a tortilla Soup:
3- Tbls oil
4- 8in tortillas cut into shreds
6- cloves garlic, minced
1- cup/ onion finely chopped
2- cup tomato puree
1- Tbls ground cumin
2- tsp chili powder
2- bay leaves
2- qt chicken stock
2- chicken breasts/ cooked and shredded
2- avacados diced
2- tortillas cut finely, fried and crisp
1/2- cup Queso Fresco( or other cheese)

Saute tortillas, garlic, and onion untill tortillas are soft and veg. and herbs are fragrant

Add tomato sauce, cumin, chili powder, bay leaves and bring to a boil. Add chicken stock, and season with salt and cayenne to taste. Simmer for 30 min. Skim fat if needed!

Pour into bowls and garnish w/ chicken, avocado, cheese and tortilla strips/ ENJOY

And or a flan for desert:
CARAMEL
6- oz. sugar
1/2- oz corn syrup
1.5- oz water

Mix sugar, syrup, and water. Bring to boil in a SS pot stirring. Stir untill caramel becomes dark brown. Divide between ramekins

Custard
1- pint half and half
1/2- tsp vanilla extract
2- eggs
2- egg yolks
4- oz sugar

Scald cream( bring to just before boiling. Slowly whisk together a small part of the cream with the eggs( don't want to make scambled eggs). Mix the rest of the cream w/ the eggs, and sugar. Divide between the ramekins. Set the ramekins in a rectangle cake pan, @ 350 degrees, and pour hot tap water to the middle of the ramekins. 20-30 in oven untill set. Chill 2 hrs

Tacos/Nachos
Lettuce (shredded)
Tomatoes (cut into small pieces)
Ground beef
Sour Cream
Melted Cheese

You really don't need a side dish since a taco salad has a little bit of everything. I guess, if you really wanted to, you could make cheese nachos or refried beans & rice.

Now I'm hungry! :-)

Well.. I have a side dish that goes with tortilla chips,super easy,and I've made it a few times before, it goes over real good,especially with the guys.

You get a tray,serving plate,something rather good size.
1 large can of re-fried beans
1 container of sour cream
1 large package of mild cheddar cheese
Tabasco sauce

Spread the beans out on the plate,room temperature,in a medium thick layer,or thin is fine.
Then over top that,spread the sour cream in a layer.
After that,sprinkle a good size amount of the cheese over
the whole plate.
Sprinkle Tabasco sauce sparingly or how much you like over the dip mixture.
cover with saran wrap,and let refrigerate for about an hour,or until chilled.
Serve with tortilla chips..

Spanish rice and beans

A tray of cut and cubed fresh fruit along with several kinds of cubed cheese.

When I make a taco salad all I have with it is hotdogs or hamburgers . You really don't need much else cause everything is in it & it's filling. Here's how I make mine. Brown 1# ground beef, season with salt & pepper to taste. Add 1 can of dark red kidney beans including the liquid. Simmer till all liquid is absorbed. Let cool to room temperature. In big bowl; break up a head of iceberg lettuce, add half of diced green pepper,half of chopped sweet onion, cut up tomato in bite size chunks. Now add the ground beef mixture & toss; pour on some wishbone house italian dressing & toss again, add 8 ounces sharp cheddar cheese(shredded) & break up some cheese doritos & mix together. I don't add the dressing or doritos till ready to eat or it will get soggy.
Most people use catalina dressing but I like the italian. I just like the taste of Italian dressing better. Try this. You will like it. Let me know what you think.
