Google the date of their wedding....see what happened on that day. Centrepieces could reflect the top songs, trends etc.

Base the theme on a popular movie of 1968. Or do trivia based on them.

Lots of photos of them growing up, then as a young couple, then as parents.

See if you can find everyone in their wedding party. Invite them. Ask them for stories of that day.

Check out what was popular in the year they were married. What were the top songs, top TV shows, etc.? Use them as themes. Use them for trivia games. Hopefully you have several pictures of the couple from "way back" and can use them in decorating, invitations, party favors, etc. What were the happy couple's interests? Where did they honeymoon? These also help with ideas.

We had everyone bring a dish that they would have made forty years ago. Keep track of who is bringing what. Then we hired a little band to play old songs so the people could dance. I agree with the others that have posted here for ideas as well. We also had a nice cake.

Just be sure everybody who means something to your parents is invited. It would bee sweet if grand kids make speeches and present their own gifts.
