I need help finding something interesting and different to do for my adult daugthers birthday with dinner?!

How about an "Alphabetical Pot-Luck Dinner" ? Assign everyone a letter of the alphabet (or the letters of your daughter's name, etc.) - that's the letter their recipe should start with.
Or, an "hors d'oeuvre" party - no "main course" - just appetizers - lots of them (this could be "pot luck" too). Even dessert would be of the "two bite" variety.
BBQ and karaoke
I say wither make her favorite home made dinner or go out to her favoroite restaurant. Have flowers waiting on the tables for her and her gift. Perfecto

Adult daughters, sounds weird, but have you looked in to a observatory night? Dinner and a science lesson may sound quirky, but depending on your family, it may work spectacularly. I know our local AZ science museum here puts them on day and a few days a week at night. It would be the perfect reason to get all dressed up (semi-formal) with your family, and you would love the pics.

Keep it fun, any thing that will divert her from thinking about old and uninteresting- Like an anti-dinner kind of spread; Include pick able and things that are her fav. Whatever you decide on, alcohol, Alcohol, ALCOHOL,.....(if you think she might like this sort of most enjoyable refreshment):))!!!!
