What to make with this chicken?!
But what should I make with them? I plan on having a bit of red sauce anyway (to garnish the chicken with), so I wouldn't mind incorporating that into something else.
I need a starch and vegetable, and I'd really rather not have pasta. I was thinking about cutting up rounds of polenta and topping them with zucchini, mushrooms, sauce, and cheese, but what else would I have?
Any ideas will be very appreciated!
*** I was also considering just roasting up some potatoes, carrots, and zucchini or yellow squash... That would be easy and tasty....

Answers: I'm having guests tomorrow night and am making chicken breasts stuffed with ricotta cheese and spinach. They look (and sound) delicious.

I think the roasted vegetable medley sounds good. The polenta would be good with the red sauce. It all sounds great- I'm sure your guests will be pleased.
Both of your ideas sound perfect....the only addition I might make is a nice salad.
All of your ideas are great but what is wrong with pasta on the side? A short, fat noodle with red sauce would be a nice side!
Be sure to have a crusty bread with balsamic vinegar/olive oil to dip it in.
A nice green salad would also be good.

A vegetable risotto would go well for the starch and the vegetable. A cool lemon gelato would make a very refreshing dessert.
Sounds like you already have a good meal planned. Some bread and wine would be good toppers.
