Appetizers?!
Answers: My husband is having a bunch of his buddies over, and he requested lasagna for dinner. I am doing that plus salad and garlic bread. But, I need ideas for some SIMPLE, COLD appetizers. I don't want anything that has to be heated because my oven will be busy baking the lasagna. I also want to try to avoid snacks that involve bread, since we will be having bread with dinner. Thanks!
You can't go wrong with an antipasto platter with all the cheeses, meats, veggies, and olives.
If you have a crockpot you can do Swedish meatballs. If you have a George Foreman grill you could do Mexican shrimp the night before. Just toss peeled raw shrimp in a ziplock with some olive oil, OJ, tequila, fresh lime juice, garlic, chopped green onions and cilantro. Marinate that, then grill (it only takes a few minutes) and refrigerate until company comes. For the cocktail sauce get a jar of salsa, add fresh lime juice and chopped cilantro.
The shrimp is really good, it's a recreation of something we had at an upscale restaurant. You can't screw the marinade up, it's just some of this and that. A few minutes for the marinade, a few minutes of grilling. A few minutes of making the salsa. Do it all the day before.

Onion dip and chips
2 pints cherry tomatoes
2 (3oz.) packages cream cheese softened
1 cup shredded cucumber well drained
1/2 teaspoon curry powder
1/4 teaspoon garlic salt
cut off top of each tomato scoop out pulp, invert tomatoes on paper towels and let drain for 30 minutes combine cream cheese and next 3 ingredients, beat untill blended. pipe or spoon mixture into tomato shel
