Appetizer....Caprese Pomodoro (tomatoes, fresh mozzarella and basil...a little s/p and drizzle with olive oil)

4 Boneless chicken breasts ... Butterfly the breasts...dip in eggwhites and then in seasoned Italian breadcrumbs...lightly sautee in medium hot olive oil until lightly browned on both sides....squeeze lemon juice over, add 1/3 cup chardonney..lower heat to simmer and cover for 15 minutes.

Grilled asparagus for your vegetable...drizzled with a little extra virgin olive oil...s/p to taste.

Spring salad with a little extra virgin olive oil and red wine vinegar ... salt and pepper to taste.

This is a very light and healthy meal...and quite delicious.

Orange glazed Cornish hens, wild rice, pea and mushroom risotto, apple dmplings and spoon bread. Oh, and don't forget the grape juice, maybe a Pouilly Fousse? (sp?)

Honey-Poppy seed Parfait with fresh berries
