I had it once when I went to a local Mexican restaurant. They served it with chocolate sauce and almonds on top. It was really good, but probably horrible for me.
When I saw it, I said hey, I bet that they cannot do that and to my surprise, they were able to make it.

They do. Its so you can have that crisp crust and then bite into creamy ice cream.
They coat the ice cream in batter, than it goes back to the freezer, than it is straight into hot oil (only for a few seconds), than serve.
Try this:
530 g vanilla ice cream
85 g crushed cornflakes cereal
2 g ground cinnamon
3 egg whites
1890 ml oil for frying
DIRECTIONS
Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

The ice cream is well coated before deep frying. I love the stuff and the Keg makes a great deep fried ice cream here in Canada.
Yes. Fried ice cream sounds absolutely revolting to me. As if there were not enough fat and calories in ice cream (but it is sooo good) they have to deep fry it as well. I couldn't bring myself to try that.
I've done something similiar.
Cold ice cream wrapped in filo pastry, then chilled in freezer for 2 hrs then deep fried for 2 mins.

omg it sounds so weird, but it's so good. they put a batter on it and then fri it. and top with all your fav toppings mmm!
